Help, I ruined the meatloaf!?
I tried a new recipe and I think the liquid to dry ingredients ratio was poor. The flavor is great, but the loaves didn't hold their shape. Now I have two pounds of meatloaf-flavored ground meat. Any suggestions on what i can do with it?
Yup, it's Mom's traditional meatloaf- ketchup, steak sauce, tomato sauce, rolled oats, onion, 2 eggs...

Just put the re-wramed pieces/crumbles on toasted bread with mashed potatoes on the side and a nice brown/beef gravy on top of it all.
Make a casserole with diced potatoes and gravy.

Is it the kind that has ketchup and onion in it like my Mom's? Make a cheese sauce, and pour some over the crumbled pieces, it will taste like a cheeseburger.
Break up the pieces, toss it in a bit of ketchup, and leave it sit a bit to soak it up. Spread it in the bottom off a pan, and top with sour cream and cream cheese cut together. Bake until the mix is heat through, serve with some cheddar on top.
Make some good beef gravy, put it on the plate, and load up the gravy.
Make shepard's pie. Boil and drain some mixed veggies, stir in a little tomato paste, or sauce, or ketchup, or whatever, and top with some mashed potaoes. Bake until heated through.

All is not lost.
Refrigerate overnight, then cut into medium cubes the next morning (won't crumble as easily). Place cubes on cookie sheet and freeze.
Bag in ziploc bag and use in spaghetti sauce the next time you want the taste of meatballs but not the fuss of making them. Tastes the same ~ kids love the "new" meatball shape.
Easy Chili: Crumble up your leftover meat loaf into a pot. Add a can of kidney beans, rinsed and drained. Add a couple cans of tomato sauce, or your choice of ground or chopped tomatoes with juice (if your tomato base is runny, add a tablespoon of cornmeal). Add a tablespoon of chili powder, half a tablespoon of seasoned salt, and half a tablespoon of brown sugar. Simmer for ½ hour and serve with cheese and sour cream if desired.
Sloppy Joes: Put meat loaf into a frying pan with ketchup, mustard and barbeque sauce. Simmer for 10-15 minutes on low heat. Serve with pickles on buns.
Chip dip: Mix meat loaf with salsa and Velveeta, or similar cheese. Microwave until cheese is melted. Mix well and serve with tortilla chips.
Shepherd's Pie: Crumble the leftover meat loaf. Stir in a can of cream of mushroom soup and half a can of water or milk. Spread into bottom of casserole dish. Add a layer of your favorite vegetable: if canned just drain and add, if fresh or frozen, cook and drain then add. Top with mashed potatoes and cook on 350 for half an hour.
Use it on nachos
Heavily season it with cumin & chili powder and use it on tacos
Use it on taco salad
Leftover meatloaf can also be used as the meat for a vegetable soup.

You could put it on bread or toast like you would some manwich (sp?) or maybe mix it with some pasta to make a meatloaf spaghetti kinda deal. That I have actually got a recipe for somewhere lol but don't ask me where lol.

ah, here's what you do. make scrambled eggs, put in your meatloaf, don't forget a little bit of milk. it works on a tight budget. and a bit of onion and top with cheese. did that this morning.
