If you kept the same grades throughout high school then you would probably get into anywhere you wanted to go (with effort).
...But that's usually not the case because high school becomes harder as a junior or senior, but you should still be fine. I trust that your a good student because I didn't have straight A's as a freshmen and I still got into UCs.
Just have high hopes and my advice is don't always count on your grades to make you the "perfect" candidate.

You must, must, must improve your writing skills exponentially before you attempt the college essay. It's a big undertaking and you need to ace that portion of the application if you want to stand out at all. Remember that they are going to see thousands upon thousands of applications that look just like yours.
If you can maintain a 3.7 for the next two years, you have a decent (but not really good) shot at most of those schools if you're a California resident. And don't just "keep up" with community service -- express your passion by finding an area you like and doing more than just what's expected. You can bet that every applicant will have at least 200 hours of community service on their record.
Remember that high school doesn't get easier. If science isn't your strong suit, get a tutor ASAP.
I'm going to take a leap by connecting your interest in NYU to your struggles with science and math. Is this indicating that you lean more towards the arts? If so, NYU is a good place to go if you have a solid portfolio. Maybe you should consider taking more art classes like ceramics, graphic design, or sculpture.

Why are you omitting U of AZ and AZ State U? They're as good as the California schools, they're easier for an in-state student to get in, and they'll be a lot cheaper than the others, especially NYU.
