Does food coloring really expire?

I was decorating a cake today & noticed there was a "sale by" date on the food coloring. How much after that date can I use it? Does it really matter, I never noticed it before... and I know I've kept food coloring for years before I've finished it off.

    The "sell by" date is pretty much just a feasible date by the store to get the product out the front door. However ... here's things to look out for w/ the various methods:

    Liquid: can get more "potent" (either darker or brighter) so sometimes with the older food colorings - less is more

    Powders: can sometimes break down

    Gels: can get thicker and dry out

    ***Also keeping food coloring in the fridge (cold) helps it to last longer, not dry out, it helps the color to "develop" faster (for those shades like Christmas Red that get brighter overnight), and it helps the color to mix more evenly into the icing.

    I don't think it matters with food coloring, I've never paid attention to the sell by date on food coloring. I wouldn't worry about it :D

    Well, every food expires, Lil!

    The day that it expires, you can still use it.

    Also can use 1 or 2 days after the expireing date.

    But it will be better not to.
