in the coversheet of the book twilight, it shows two arms holding a red apple, what does this represent?

It represents a blatant rip off of C.S. Lewis' cover of "Words to Live By"

Stephenie has said before that the apple on the cover represents choice and the possibility of something forbidden. I agree with the poster above me who said to go to her website. You should because she explains a lot of small details there.
The person who claimed that it was representative of the scene where the apple bounced off of Bella's shoe and Edward caught it is wrong. That was a scene from the movie, but it wasn't in the book.

If you watch the movie twilight at the begining when Bella and Edward first meet in the cafitera Edward picks up a red apple and drops it to his foot and the n kicks it in the air and and catches it with his hands that has to do with the cover of the book. There not really a meaning to the apple and the hands but its in the movie.

It represents choice/the forbidden fruit. I highly recommend the stephenie meyer's website. there is a FAQ section for each of the books. It explains all the covers and more there.

It represents when Bella and Edward actually started to get ot know each other because it was in the cafeteria when she dropped the apple and it bounced of his shoes and he gave it to her.
