I left the salt out of my recipe....?

I made Buttermilk Blueberry Muffins...followed the recipe as close as possible. I even went to the store and got Safflower Oil and an orange for the orange zest.. I left out 1/4 tsp of salt! They are in baking now. I have 20 mins. till they are done... will it ruin them??? I need them for a meeting tomorrow!!

they came out of the over and they are actually very good.

I like the one about putting salted butter on.

    Salt in baking is actually more of a flavor enhancer and seasoning than a main ingredient. It won't add any identifiable flavor to your muffins, it just works to balance the other flavors and make them stand out more. So perhaps they may be a bit bland. But I really doubt the flavor will hurt that much. I think what may be your bigger issue is that without the salt, your leaveners like baking soda or powder won't react correctly and your muffins may not rise with nice crowns. I would taste one and if they taste fine, then great you're all set. If they are a little bland drizzle on a little powdered sugar glaze before you head to work...the added sweetness will distract everyone.

    lol I highly doubt anyone will notice the difference. It's just as well that you left out the salt. People, I mean everyone can do without salt ! : P

    Nice to see you're still around Rob's mom : ) And If worst comes to worst just pick up some small dessert at your local grocer on your way over there tomorrow.

    the crust will be a bit flat tasting but that doesn't effect whether the crust is flaky or not. It will turn out correctly. When I am cooking I do a "chef" thing!! I measure all the ingredients into separate bowls before starting to mix anything!! This saves me from "forgetting" to add something. One year I was going to use less sugar in the Lemon Chess pie!! I wound up not putting ANY sugar in it!! My sis said it was truly a LEMON pie!!

    No they will bake pretty, but they will taste a little flat and plain. Well you know it's a lesson, I'll bet you never forget to add the salt again... If you spread salted butter or margarine on it when you eat them it will add a little saltiness..

    The flavors wont pop but if you are using salted butter (regular butter) on them it will help a LOT.

    There is actually salt in baking soda and powder so you wont be left with No flavor.

    They'll be fine. All salt does is highlight the flavors. They'll rise normally and bake normally. Trust me, I've done that plenty of times.
