Italy - pasteurized cheese & milk?

I know that in the US, restaurants use pasteurized cheese and milk. Is it the same in Italy or is it unpasteurized?

    Raw milk was sold in California until a few years ago. People sometimes did get sick from drinking it, but that was a rare occurrence. To Pasteurize milk at home, it should not be boiled. Instead, put it in the top part of a double boiler and bring it up to 161-degrees F. and hold it there for fifteen seconds. Keep stirring it while you are heating it, to make sure it is heated evenly throughout. Then cool it quickly in a cold water bath in your sink.

    It's the same!! I think it would be illegal to sell unpasteurized milk or dairy in general...
