Well... no
You can't actually translate that as it is. You have to modify it a bit otherwise it will sound weird in spanish.
If you say "vamos a comer mexicano", people who speak spanish will understand that you want to eat A mexican (person) and Im sure thats not the point (unless u really are into latinos).
Now, the correct translation or, the closest would be:
Vamos a comer COMIDA (food) mexicana. - let's eat mexican food.
We would definitely understand its not a person if we say it in english but, in spanish, it really is veeeeeeery diferente.

What you are trying to find is "Ahora vamos (o iremos) a almorzar" there you are making crystal clear that you are the one in charge and have more force than Almorcemos which depends a lot more of the tone of the voice, hope that helps :-) 'Ahora iremos a almorzar' is a 'nosotros' command as well as almorcemos :-)

Maybe you missed a word, probably "food", Maybe "Let´s eat Mexican food".
Or it could be:
Question.-What kind of food do you want to eat?
Answer.- Let´s eat Mexican"
