Good ideas for a carb addict on a low carb diet?
My doctor has reccomended a low insulin diet for me, and besides giving up my beloved diet coke, I'm not supposed to eat most carbs. Most of my diet is carbs - help! A salad just doesn't fill me up... Cheese without crackers? Help me see beyond the carbs!!!

Protein bars, the kinds that have sugar alcohols instead of sugar, are tasty and loaded with vitamins. Sargento makes tasty low-fat cheese that is high in protein. If you like Cool Whip, they make a fat free/low sugar version that you can put over fruit for a nice dessert that is low in carbs. Murray makes sugar-free cookies that are sold in many chain grocery stores.
Refried beans don't sound like a diet food, but some brands have little or no fat. You have to check the label. The healthier versions are very, very good for people who need to stabilize their insulin levels because they provide ample protein and fiber and deliver their energy slowly and evenly. Yes, they have some carbs, but good carbs. You can have them with cheese, spice them up with salsa, or both.

When I need that crunch... or feel of chips, I get pork rinds and dip in cottage cheese mixed with dry ranch dressing mix. I also snack on popcorn.

Steam your veggies, try things like carrot, pumpkin, sweetcorn, broccoli and cauliflower. You can always use cheese sauce or black pepper/nutmeg to add some different flavours.
