Is it true that fresh farm eggs can be kept out of the fridge for up to 30 days?
A colleague brought in dozens of eggs (hubby is a farmer) and left them in her office all week and she is trying to sell them.
I was a bit concerned about them not being refrigerated but she insists they are fine for a month or so.
Would you eat them after they've been sitting on an office shelf for a week, let alone a month? I won't go near them!

She is correct fresh farm eggs do not need to be refrigerated, as long as they have not been washed to remove their protective outer membrane.
You should really try one, I bet you may be reluctant to go back to grocery store eggs.

unwashed fresh eggs can be kept out of the fridge for up to 6 months safely.
They cannot have been washed as this washes off the protective bacteria layer that allows eggs to not rot not can they have ever been in refrigeration. You cannot do this with any eggs you buy at the grocery store and you would have to ask at a farmers market if the eggs are washed (most will be).
Eggs are a popular food item on long boat trips because of the fact they can be kept for months with no refrigeration so sailors have carried eggs on their journeys for thousands of years.

Eggs are not refrigerated when they come out of the chicken, neither are they refrigerated in the supermarket. They are fine not refrigerated for a month or so, she is right.

I know a system to keep eggs out of the fridge.
It's to spread leenseed oil all around the eggs.
Oil blights and makes a thin-film that can protect eggs...

I wouldn't go near them either but I am fussy like that. You could try putting them in a glass of water. If they float they are still good sink they are bad. I would advise keeping all foodstuffs like that in the fridge. Why risk it.

I'm with you ! I know anything I've ever read and the USDA guidelines are to keep them under refrigeration.
