What is a good vegetarian lunch?
I'm hungry :D What should I have for lunch? No meat, obviously, and I'd like it to be relatively simple to make. It should take under 30 minutes to prepare. Best answer to whatever I decide to eat. Thanks!

I enjoy tofu and rice. To make it, simply cut up some firm or extra firm tofu into diced pieces, fry it on a dry pan (no oil), and boil some rice. Put the tofu on top of the rice when you are done with the cooking, add your favourite sauce or seasoning for flavour and voilà. You are done.
You could also try to make a simple walnut salad. Buy a pre-made packaged salad at the store or just the ingredients( like lettuce, beats, carrots, walnuts(already sliced), carrots, cucumbers, red onions, cabbage, spinach, whatever you want)

Creamy (diary free) Spinach Soup
1 tablespoon olive oil
1 large onion, diced
3 cloves garlic, thinly sliced
3 zucchini, quartered lengthwise and cut into 1/2 inch pieces (about 1 1/2 pounds)
8 cups Veggie stock
3 potatoes large dice (about 1 pound)
3 cups tightly packed spinach, washed, dried and stems removed
Salt and pepper to taste
Preparation:
Add olive oil to preheated soup pot. Add diced onion and sweat over medium heat for 5-10 minutes,
until translucent. Add sliced garlic and continue cooking 5 minutes more. Add zucchini and continue cooking
5 minutes. Add veggie stock and potatoes and bring to simmer. Season lightly with salt and pepper and simmer
for 30 minutes or until all of the potatoes pieces are completely cooked and break when pressed between
your fingers. Add spinach leaves and cook 3 minutes longer.
To Complete:
Puree all of the ingredients together with an immersion blender, food processor or blender. Return to the pot
and check for final seasoning. Serve piping hot with a nice crusty bread!

Even if Milk/Milk products are totally avoided--one can take (minimum) 7 course Pure Vegan Full-meal-South-Indian way.-it can be scaled upto 16 course also.

whole grain bread for a sandwich. thinly sliced chilled alvocado, thinly sliced tomatoes, very clean fresh spinach greens, with dijon mustard on one slice...lot of mayo on the other. Layered however you choose. excellent sanwich.

make a salad with tomatoes and other fresh vegetables..
Fry soya beans, saute tomatoes and cook them together..!!
