I just bought some fresh shrimp and want to fry them tomorrow night. At the chinese restaurant, they serve a?

At the chinese restaurant, they serve a fried shrimp with shell on and little bits of jalapenos mixed in. The shells seem slightly crunchy like they were tossed with a flour or something. I want to duplicate the recipe - can anyone tell me how? I think it is fried in butter - but not sure at all. Very yummy!!! Thanks in advance - I will make sure to award best answer! The chinese restaurant is in south east Arkansas, so possibly a regional thing? But surely someone knows ...

    The coating is probably corn starch. The oil is either canola or sesame oil.

    Well I'm not familiar with that Arkansas restaurant, but I'm going to tell you how to make Chinese crispy fried shrimp!

    Ok, you already have the shrimp, just make sure they are clean, shelled and deveined. Just leave the tails on them.

    You are going to need the following for the batter:

    DRY INGREDIENTS: 1 cup of flour, 3 tsp of baking powder, 1 cup of corn starch, 1/2 tsp salt

    WET INGREDIENTS: 2 tsp of peanut oil (vegetable or canola oil is fine too), 1 cup of water, and 1 egg, beaten.

    Mix all the dry ingredients in a bowl. Add all of the wet ingredients into the bowl slowly and beat until well mixed.

    Heat a couple inches of oil in a high sided frying pan or wok. You'll need enough to at least cover the shrimp. Heat to about 375 degrees. My stove is electric and has numbers from 1-10 for the heat, and for me this works right between a 7 and 8 mark. If your stove is marked Low, Med, Hi, I think it should be right around the middle of Med and Hi. Let the oil heat up a few minutes. While you wait, grab a large plate and put some paper towels on it. You'll need this to drain the shrimp later.

    When the oil is hot and ready, go back to your shrimp and dip them in the batter then slip them into the hot oil. Let them fry for about 2-1/2 to 3 minutes, or until golden brown. Remove from oil and place them on the paper towels to drain.

    They should be crispy, golden, and delicious! As far as the jalapenos you mentioned, if they were fried in with the batter, then just chop them up, remove the seeds, and add them to the batter before dipping the shrimp. If they were scattered on top, then just chop and scatter on top when you're done frying them.

    Go to your local grocers that has a seafood dept. or any seafood store. They will have boxes of different mixes to fry your shrimp. Get the one that says "Tempura" The instructions are so easy and the shrimp turn out light and crispy and yummy. You could make your own batter but doing that is labor intensive and if you don't already have all the ingredients it's expensive. Before you cook the shrimp don't forget to clean them. Take the shell off except for the tail. Slice the shrimp lenghtwise about a quarter way through and take the "vein" out. You'll see it. It looks like a dark string, just use your knife to lightly scrape it out. It's really easy to do. Then follow the directions on the box for cooking. Remember to drain the shrimp on a couple of folded paper towels so the excess oil is absorbed and the shrimp stay crispy then "viola" Dinner is served. Save some for us, we'll be over at 6.
