What do i cook Bacon wrapped chicken with?

im doing a meal tomorrow for my boyfriend (god knows what i'll do for a starter) but im going to do bacon wrapped chicken stuffed with cheese and i dont know what to have with it.. hes picky, he doesnt like rice and only veg he likes is carrot. chips is a bit boring and plain.. he would have mash or roasts but i think it might be dry, like i should do a sauce maybe? i just dont know what to put with it

no rice!

no veg except carrot!

should i use pasta? and if so, what type?

    heh here is the best idea to cook Chicken wrapped in Bacon-) These simple flavours combine really well when cooked at high heat. Please use fresh herbs to create intensity as dry herbs just suck and should be kicked out of house and home! For intense aromas mix oregano, basil, thyme, mint and rosemary together. The rosemary will keep year round in your garden, the others keep potted inside during the cold months (I leave mine on the kitchen window sill.) Serves 4 Ingredients 4 x skinless chicken breasts 8 x bacon slices 2 garlic cloves 1/2 bunch of assorted fresh herbs; (oregano, basil, thyme, rosemary, mint) Sea salt and cracked black pepper 2 Tblsp olive oil For the gravy: 1-2 Tblsp flour 350ml / 12fl ozchicken stock Mise-en-Place: Preheat oven to gas mark 6/ 200°C /400°F chop garlic chop the assorted herbs Prepare the stock for the gravy (preferably hot) Method: Wrap the bacon around the chicken Sprinkle over the chopped garlic, herbs, salt and pepper. Place in a roasting tray with the olive oil Roast 20-25 minutes To test if the chicken is cooked; cut a slit through the thickest part of the breast, if the flesh is white and the juices run clear it is cooked. If the flesh is still translucent and pink return to the oven. Make the gravy: When the chicken has cooked remove 2-3 tablespoons of the melted bacon fat from the roasting tray and put into a small saucepan over a medium heat Add the flour to the bacon fat and mix together to form a paste. Cook for 1 minute Add the stock and rapidly whisk to incorporate the flour and fat without getting lumps Increase the heat until the gravy begins to boil at which point the liquid should rapidly thicken Check the seasoning of the gravy Serve with the roast chicken Adjust: The gravy: Too thin: Boil rapidly until the liquid volume evaporates Too bland: Add salt and pepper Presentation: In the display photos the chicken has been served with roast potatoes and roast tomatoes. Off centre arrange the roast potatoes into a mound, aim for good height. Place the chicken on top of the potatoes. (If you have cooked leg instead of breast cut the leg in half at the joint. Place the smaller joint on top of the larger) Tomatoes on one side. Pour over the gravy. Try out ...Cheers-)

    There is a pasta called Orzo, it looks like rice but a bit bigger. So it will go very well with your dish. Another really easy thing to make is Cous cous. you just add boiling water to this pasta, seasonings, little bit of oil or butter, cover the bowl, and in a few minutes it is done. It is really tiny bits.

    Carrots are fine. If that is all you have to work with. Then so be it. Cut up your carrots, in diagnol pieces or large diced pieces. Boil to just when they are almost ready. Drain them, cool them. Get another pan, put some butter, brown sugar, about 1 tblsp of honey, pinch of salt, black pepper, and sautee the carrots in that to finish off the cooking process. Your boyfriend will love it.

    Maple glazed baby carrots would be good. Steam them until tender and then melt 1 t of butter and 2 T of maple syrup. When combined, toss carrots and serve.

    If you have your heart set on pasta, try an orzo pasta pilaf. I cook my pasta (small rice shaped) in chicken stock - hubby loves Rachel Ray's brand. Toss with sauteed mushrooms and onions & your choice of seasonings and a bit of olive oil/butter. So good!

    Menu I:

    Crostini topped with brie and carmelized onions and drizzled with honey

    Bacon Wrapped chicken

    Steamed fingerling potatos tossed with butter, salt, pepper, and parsley

    Chopped lettuce salad with ripe pears, candied walnuts, gorgonzola, grape tomatos and Champagne vinagrette

    Menu II:

    Antipasti with olives, provolone, sopressata, marinated artichokes, mushrooms, pepperoncini

    Bacon wrapped chicken

    Angel hair pasta tossed with green peas, bacon, cream, and parmesan

    Menu III:

    Bacon wrapped chicken

    Gingered glazed carrots

    Red potatos tossed with sour cream, garlic, butter, and bacon

    Fresh green beans with onion

    Menu IV:

    Tomato Bisque with creme fraiche and dill

    Bacon wrapped chicken

    Mashed potatos with sour cream, or buttermilk, and garlic

    Carrot and raisin salad

    Menu V:

    Cream of Mushroom Soup with white wine and sour cream

    Chicken

    Baked potato casserole

    Fresh green beans

    Hi,

    for starter do a nice soup and make you meal into a three course meal, main course do chicken wrapped in bacon with mozzarella cheese

    add a small bit of oil on the chicken before adding the bacon.

    use herbs such as basil and black crap pepper to make the meal interesting.

    roast potoates, carrots and chicken gravy (i recomend bisto)

    add juices from the chicken to the gravy it self.

    and serve ..

    Desert - a nice cheesecake or fudge cake, with ice cream or dairy cream.

    You could do it on a bed of spaghetti with cheese sauce.

    If you don't know how to make a cheese sauce, then email me and I will give you the recipe.

    You could even shred some carrot and lettuce and serve it with that, because that's nice and juicy.

    You could do carrots to fill the dinner up and you could do part boil potatoes and then put them in the oven covered in lemon juice (not too lemony!) and oregano on top.

    Other wise, you could do mash potatoe with alot of butter.

    What about cheesy potatoe wedges?

    I would definitely go with mashed potato's or maybe even like roasted potato's with rosemary and garlic.....both would go great with the chicken you described.

    You can roast the carrots and potato's together too.

    I'll swap your chicken recipe for my roasted potato w/rosemary and garlic recipe :)

    I would do it with new potatoes with butter and fresh herbs on, baby carrots and asparagus.
