Can I freeze fresh tomatoes?
My tomato crop is getting out of hand, and I need to start preserving them. I plan to can some, but can I also dice and freeze them? I know they will get mushy, but will it affect the flavor?

According to Marsala's Kitchen, one of my favorite Italian cook books you do not need to blanch the tomatoes. Wash them off and freeze them. I did it when we had an over abundant tomato crop one year. They tasted wonderful in my sauces.

Yes, you can blanch and freeze but if you are going to do that why not go ahead and make a basic tomato sauce and freeze that? Later you can thaw and make into any type of tomato sauce.

It can also depend on how long you are going to preserve them in the freezer , make sure if you do put them in the freezer that you place them in a very seal tight plastic bag , with no air , so they wont lose their juices or flavours .

They need to be blanched first. It won't affect the flavour unless they get freezer burnt. Just make sure they are well wrapped when you put them in the freezer
