Help with a potato recipe?
My step-mother used to make a type of potato patty using left over mashed potatoes. I know she added flour to the potatoes, and I think an egg, but I'm not sure. The potatoes had a consistency that could be hand shaped into patties, like a burger. She used to fry them until they were crispy on the out side, soft and steamy on the inside. We would eat them in place of hash browns in the morning with breakfast, or she would fix then as our starch on the nights we cleaned the fridge of the leftovers. Since she cared soooo much for me, she shared all her cooking secrets. (NOT!) I have tried to recreate them several times, and can't get it quite right. Any one with ideas about what I am talking about, I don't care if it's not an actual recipe. Guidelines will be appreciated.
If it helps, the potato thing may be something she picked up from either her German grandmother, or while living with former in-laws in Tennessee

My family calls them potato pancakes. They're just leftover mashed potatoes with 1 egg and some flour, prepared just like you said here. This is the way I make mine:
For every 2 cups of leftover mashed potatoes, add 1 large egg, lightly beaten, and 6 Tablespoons of all-purpose flour. I always fry mine in butter for more flavor, but you can also use oil of you like.

Yes. You add an egg two about 2 cups of leftover mashed potatoes. you can add a little flour if you need to stiffen them a bit. You can also add some grated onion. Then you just fry them in oil or oil and a little butter.
This is pretty standard german and dutch fare.
You can use flour on your hands when you shape the patties. This will keep the patties from sticking to your hands and also makes the finished patties a little crispier.

Potato Croquettes Recipe
Ingredients
- 1 kg (2 1/4 lb.) Potato
- 3 egg yolks + 2 eggs
- 50 g (3 tbsp.) butter
- 250 ml (1 cup) flour
- Bread crumbs
- Salt, pepper, grated nutmeg
- Oil for frying
1.peel and wash the potatoes; steam them or cook in boiling water;
2.drain and mash without adding any liquid;
3.melt the butter in a saucepan; whisk in the egg yolks and continue whisking over low heat until the mixture thickens;
4.immediately remove from the heat and blend into the mashed potatoes;
5.season with salt, pepper and nutmeg and form into croquettes;
6.roll each one in flour, then dip into the bowl containing two beaten eggs;
7.roll in bread crumbs and deep fry; remove when golden;
8.serve hot.

We often had these on a Sunday night with Mum adding chopped lamb from the Sunday roast.

LEFTOVER MASHED POTATO PATTIES
Leftover mashed potatoes (about 1 quart)
1 onion, diced
1 egg
1 c. cheese, grated
Flour
butter
Salt and pepper
Combine mashed potatoes, onion, egg and cheese. Shape into large size balls. Roll into flour and flatten into patties. Melt butter in frying pan and brown for about 5 minutes on each side. Salt and pepper to taste.
You can leave out the cheese and onion if you wants.

You are pretty much right on with the ingredients. My mom called them potato pancakes, and I still make them. Beat an egg and mix into the potatoes with enough flour to make them stiff, but not dry. Form into patties and fry in oil until they are crisp and golden brown on both sides. Drain them on a rack. Serve hot. You can also freeze the leftovers and then reheat in the oven.

You have all the ingredients right but add salt and pepper and when patties are formed, dip in flour and chill in fridge before frying in a mixture of oil and butter. Start on high temp to brown and lower to med-low to heat through. Nice with a little chopped parsley mixed in and, or minced onion.
We grew up eating them, love 'em. Also, if you are a fish lover you can add cooked white fish or salmon. If you add salmon, serve with a Hollandaise sauce or lemon butter sauce and you have a posh lunch served with a salad or asparagus. yummy.

A good recipe for left over mashed taters.
1/2 cup flour
1/4 tsp salt
1 egg lightly beaten
1 tsp baking powder
1 cup mashed potatoes-warmed just a bit
1 tsp dried parsely
Mix everything together and form into little round balls, then fry in hot oil, drian and enjoy.
Or you can make these into potato pancakes and just mash the balls flat.

it's from her grandmother, they've got a bunch of different names, latke, potato pancakes, kartofflepuffer, as for guidelines there are more variations on how to make them than there are names for them. the best advice i can give you is just keep playing with the recipe until you find something that works. if they're coming out too dry try less flower, if they're not holding together well more egg etc. etc.

umm im a great cook but i dont work to much with potato resipeas but i think you might be reffering to potatopancakes
