Acorn is a small green acorn shaped squash with a sweet orange flesh. Hubbard's come in 2 varieties, blue and green. They have a lighter colored flesh but are very good if steamed or boiled and drained well, mash, then add butter and salt and pepper and touch of nutmeg. Hubbard's are a good keeper and if kept in cool place like a cellar will keep all winter. They can be watery IF not drained well in a colander before mashing. The easiest way to peel hubbard is with a very wide vegetable peeler.

Do you mean in appearance? Or just in taste? Acorn squash are sweeter, I think, and not as watery. I just cut them in half, scoop out the seeds and bake them, with or without stuffing. Hubbards are just for pumpkin puree, as far as I am concerned, and they are really hard shelled and difficult to peel. I don't actually like to grow them, but I have heard that the best way to deal is to bake the whole thing in the oven and then scoop out the flesh before putting through a food mill.
My favorites are butternut and Perfection squashes, both good for everything.
