is this a healthy meal: carrots + boiled eggs + potato?

is this a healthy meal if i eat it every day? a couple of cut up baby carrots + small potato + cut up boiled egg? it makes up for about 2 cups all together. what kind of nutritional value am i getting out of this? also, will this be enough veggie for a day?

    A good diet is not just about nutritional values of the food you eat. It’s also about the overall calorie intake, the cholesterol, the fibers, the antioxidants, the GI (glycemic index), the variety…

    I would personally be bored to death eating the same thing every day.

    Both carrots and potatoes are roots. They’re good, but not the best. I eat carrots if they’re part of a meal (like a vegetable soup), or if I have the munchies between meals. I only eat potatoes if I have a craving for them, two or three times a month.

    Try something green like broccoli…now…we’re talking…tons of vitamins C and there is not a year that goes by without some scientist finding another good thing about broccoli (all the cabbage family of veggies are super good for your health).

    Baby carrots are just regular carrots that were peeled and cut into those cute little small cylinders, so they’re perfect to eat raw, as a snack, when you get the munchies, between meals (lots of vitamins A).

    All fruits and veggies are good because they have a low GI…except for sweet potato (medium GI) and watermelon and potatoes (high GI which is associated with obesity). So potatoes are high GI food, and theoretically, your blood sugar levels would be better off if you eat a few teaspoons of table sugar than a baked potato but practically, the potato would ultimately be better for you because it has a lot of different vitamins and minerals. Humans can subsist healthily on potatoes and milk, but not on sucrose and milk. Still, a sweet potato would be better, and even better yet…any other veggies.

    Eggs are a very good source of proteins but, do not eat more than one yolk a day. Yolks are full of good nutrients but they also have all the cholesterol and most of the calories. On the other hand, the white part has no cholesterol, very little calories BUT more proteins so two eggs whites are better than one whole eggs.

    At the end, balance is the key. You should eat lots of different food which would bring you lots of different nutrients. Most of all, make sure that you eat enough, about your Basal Metabolic Rate so your body will not lower your metabolism and then you’ll have to live the rest of your life eating carrots!

    Well, you have to take cholesterol from the eggs into consideration. If you're eating eggs every single day, I do not think that's necessarily healthy. Everything in moderation. Maybe instead of eggs on some days have 3-5oz. chicken, or turkey. Same thing with the potato, it's healthy, but it's not the healthiest starch. Sweet potatoes, for example, are healthier, they have more nutritional content. Carrots are good as well, but why not more variety? Throw in some tomatoes, cucumber, broccoli, bell peppers, and you'd pack in much more nutrients. Carrots, boiled egg, and potato is not an unhealthy meal, but it doesn't make any sense to just eat those 3 foods, it's boring, and you're going to get bored eating it. Mix it up and it'll be more satisfying and healthier at the same time.
