Lots and lots of left over turkey from a roast turkey! What can I do with it?

OTHER THAN turkey sandwiches and turkey soup.

    creamed turkey, turkey meatloaf, turkey fried rice, etc etc etc... turkey omelets are not my favorite, but they work.

    I would just make turkey salad - chop it up, mix in some chopped celery, a little relish, mayo, salt and pepper. Or you could use it in green salads. You could freeze some for future use or give some to neighbors, family, friends. I wouldn't refuse some free turkey. I wonder if there is such a thing as turkey quiche like first poster suggested. I guess you can put anything in a basic quiche.

    I would use half and half in the place of evaporated milk though.

    Turkey Tetrazzini - quick and easy

    May be assembled in advance and frozen: heat covered dish at 350 degrees F (175 degrees C) for 1 1/2 hours."

    INGREDIENTS

    2 (8 ounce) packages angel hair pasta

    1/4 cup butter

    2/3 cup sliced onion

    1/4 cup all-purpose flour

    2 cups milk

    1 teaspoon salt

    1/4 teaspoon ground white pepper

    1/2 teaspoon poultry seasoning

    1/4 teaspoon ground mustard

    1 cup shredded sharp Cheddar cheese, divided

    2 tablespoons chopped pimento peppers (optional)

    1 (4.5 ounce) can sliced mushrooms

    DIRECTIONS

    Preheat the oven to 400 degrees F (200 degrees C). Bring a large pot of lightly salted water to a boil. Add the pasta and cook for 4 minutes, or until almost tender. Drain.

    Melt the butter in a saucepan over medium heat. Add the onion; cook and stir until tender. Stir in the flour until blended, then gradually stir in the milk so that no lumps form. Season with salt, pepper, poultry seasoning and mustard. Cook over medium heat, stirring constantly until the mixture thickens. Remove from the heat and add 2/3 cup cheese and pimento, stirring until cheese melts. Add undrained mushrooms to cheese sauce.

    Place a layer of pasta in the bottom of a 9x13 inch baking dish. Cover with a layer of turkey, and then a layer of cheese sauce. Repeat the layers. Sprinkle remaining 1/3 cup cheese over top.

    Bake for about 25 minutes in the preheated oven, until sauce is bubbly and cheese on top is toasted.

    How about making a turkey pot pie.Buy the crusts that are all ready made,like Pillsbury.Buy a couple of jars of grav.Cut up potatoes,carrots and throw a few frozen peas in it.Be sure you cut vents in the top pie crust.I've done this several times and it came out reall good.

    You can freeze it in family size portions for another day.

    My favorite is turkey chop suey. Put the turkey in some gravy with a drained can of chop suey vegetables, heat, and serve on rice or chow mein noodles.

    Pot pie is yummy - use packaged puff pastry to cut down on the work. Any chicken enchilada recipe is pretty good with turkey. The last little bits can be used for pot stickers or dumplings.

    a turkey stir fry. Tear up meat and chop up bell peppers and onions. Cook it all in an electric skillet, and serve with tortillas. YUMMI! (that's what we do with our leftover turkeys) It's like a chinese-mexican dish and truly amazing!

    Any dish that calles for chopped chicken can be used with turkey.

    Chicken with Tomato and Spinach (prep time - 10min/cook time 15min)

    1 1/2 cps diced chicken (or turkey)

    1 large can of Italian seasoned diced tomatoes

    4 Tbls tomato paste

    1 cp mushrooms

    3 cps loose baby spinach (about 1/2 of a bag)

    1 1/2 cps cooked penne pasta (or whatever you prefer)

    1 cp shredded mozzarella cheese

    In a lrg pan over med heat combine the diced tomatoes and tomato paste. Mix well and add the mushrooms. Gently fold in pasta, chicken and heat 10 min. Add the spinach, stir gently and serve immediately. Top with cheese and serve.

    Italian Chicken Melt (alternate use of the above recipe)

    6 slices of french bread

    Garlic butter

    2 cps of Chicken w/Tomatoes and Spinach

    1 1/2 cp mozzarella cheese

    Spread the garlic butter on the french bread and toast in the oven for 3-4 min at 400*. Spoon about 1/3 cp of the Chicken dish onto each slice. Top with 1/4 cp of so of cheese. Toast in the oven another 2-3 min till the cheese is melted.

    Chicken Pot Pie (prep time - 15 min/bake time - 25 min)

    We love this one. It doesn’t take any time to throw together and it’s delicious. Be sure to read the note at the end or the crust may not turn out well.

    1 ½ cps cooked chicken (or turkey)

    ¾ cp frozen whole kernal corn

    ½ can green beans

    ¾ cp frozen sliced carrots

    ¼ cp frozen peas

    1 jar Heinz Chicken Gravy

    1 ¾ cp Bisquick

    1 egg

    2/3 cp milk

    Preheat the oven to 375*

    In a med bowl stir together the chicken, corn, green beans, carrots and gravy. Set aside. 2 to 2½ cps of any fresh, canned or frozen veggies can be used.

    In another bowl mix the Bisquick with the egg and milk. Stirring just till blended.

    Spray a deep dish pie pan with cooking spray. (It can also be cooked in 4 smaller single serving dishes, 10-12 oz size) Spoon the chicken gravy mixture into the prepared pan. Spoon the Bisquick mixture over the filling.

    IMPORTANT DO NOT try to put the top crust it in the middle and spread it out. It will be too thick in the middle to cook through. You must put spoonfuls around the edges, maybe an inch or so apart and then a spoonful or two in the middle. Spread it out as evenly as possible. Bake 25 min or until the crust is golden brown.

    Wonton Chicken Salad (prep time - Dressing should sit 8-12 hrs and I usually fry the wontons the previous day as well but the salad takes just minutes to throw together)

    Salad

    2 bags chopped lettuce, any style you like

    2 cps chicken, cooked – diced

    1 bunch green onions, chopped

    1 can water chestnuts, drained

    ½ cp bean sprouts, drained

    1cp fried wontons, crushed

    ½ cp craisins

    Dressing

    ¼ cp vinegar

    ¼ cp salad oil

    2 Tbls sugar

    1 tsp Accent

    ½ tsp salt

    ½ tsp pepper

    1 tsp sesame seeds

    Dressing – Measure the vinegar and oil into a container. Add all the rest of the dressing ingredients. Shake well to blend everything. Best if made the night before serving. Refrigerate. Shake before pouring over the salad.

    Salad – Heat ½ inch salad oil in a large skillet. Fry about ½ of a pkg of wontons in the oil till brown. Careful they cook quickly. Use metal tongs to turn. Drain on paper towels, crush to small pieces.

    Put lettuce, chicken, water chestnuts and bean sprouts into a large salad bowl. Chop the green onions and add them to the bowl, toss. Salad can be refrigerated at this point.

    Just before serving, add the fried wontons, craisins and dressing. Toss lightly.
