How does frying food turn bad?

Now, I know all the facts about fried food being bad. But I want to know how does it become bad. How does chicken(not so bad for you), and olive oil(rather good for you), go from healthy to bad? And what oil is healthier to use when frying food?

Oh. By the way, Im talking about pan and deep frying.

    I just a mum not a chief but i use oil sunflower for every thing apart from fryed eggs i use cooking fat solid block i like the taste better.

    The combination you gave isn't bad. It's when using a deep-fryer, (A) not filtering the oil after each use, (B) not changing the oil out and cleaning the well thoroughly (C) using the wrong oil in the first place. All this turns into saturated fatty oils, to put it simply. Here's some good oils for the stove top : Extra Virgin Olive Oil, canola oil, safflower oil, grape seed oil, peanut oil, vegetable. oil. I only use 3 oils for deep frying :Refined olive oil, EVOO,yes, the breakdown temp. is 662*f and can become toxic. Don't worry, no one fries at that extreme temp. (unless they're a knave-lol).The other is peanut oil, and like the others requires daily maintenance. Any oil that's been used multiple x's with different foods needs to be changed out within 3 days. Never use the same skillet oil for different items. Oils that are solid at room temp. (animal or veg.) will do the same in your blood system, use sparingly.

    Only someone that knows nothing about cooking can say that is good to fry with olive oil, only stir fry or browning , for deep fry use canola oil, sunflower oil refined, the problem with frying is most people don`t set the proper temperature when frying and not using enough oil you can not cover food properly, ex: you want the best fry fish oil must cover fish only to half, and the turn it over to the other side.

    Use olive oil sparingly or not at all for rying stuff. It has to low of a smoke point meaning it will burn faster.

    Even though olive oil is a better choice of fats it doesn't mean that lot of it is good for you. It is still a fat and has quite a few calories.

    When you bread the chicken, with a egg, then put it in oil(Olive and Canola and Peanut is better), it will turn hard, and settle in your body, clogging your arteries. Now and then it is okay, not all the time.

    see only 2 tablespoons of olive oil are good for you you are adding calories to your chicken and you are also frying them in pure fat even if its olive oil still is like frying it in reg. oil with few less calories

    Usually most fried items are breaded and th breading can soak up some fat. but in truth fried foods aren't bad. they're bad for the same reason everything else is bad for you in america. because most people eat way to much of it.

    well something like vegatable oil.. or some light peanut oil

    you can use regular fatting oil.. just don't use too much of it....

    remember its not what ya cook its HOW ya cook with your ingredients..
