I haven't done it myself but my best friend is a 14S, so let me give you a little input.
14J think they are just like 14S but better. In reality the job scope is way different. 14S also HATE 14J with a completely illogical passion. 14S think they're ten times better than 14J and that 14J shouldn't exist. 14S think they are just like 11B but with a Stinger missile, and nothing could be further from the truth (except perhaps 31B saying they're like 11B). In reality, 14S are not grunts and are not really trained for dismounted Infantry combat the same way 11B are. They're not trained very well for mounted combat, either. They say they go with Infantry units, but the truth is that we already have an entire company in each battalion that does that job (Weapons Company). They drive a HMMWV with a funny looking box on the back that has a M3P .50 cal machine gun, and Stinger missiles. Note that everything in the 14-series CMF is based on shooting down aircraft, of which our enemy has exactly ZERO. Their pilots all killed themselves on 9/11.
The best benefit is that you'll have to get a security clearance that opens up some Federal jobs for you after service. The job is somewhat vaguely like being an air traffic controller for enemy aircraft. If we ever have a war where the enemy has aircraft and haven't already destroyed air defenses, then 14Js track them using radar and broadcast early warning info to 14S batteries. Kinda like 19D except it's aerial targets and they're not as arrogant (19D are more arrogant than Marines).
Amongst themselves, when they don't think Infantrymen can hear them, 14-series absolutely hate their job, especially Regular Army. National Guard isn't quite as bad. When grunts are around, they say they have the best job in the world and are the most hardcore MFers in God's cruel kingdom.
You will like AIT, because (unlike the grueling torture experienced in 11B OSUT) you do get weekends off, most evenings off, cellphones, etc. I think you're not allowed to drive a car, but you can taxi to a hotel, get a whore, and a lot of alcohol.
Now, I'm not saying that 14-series all should jump off a cliff. If you become one, do NOT become an arrogant turd because one day I'll find you. I love every Soldier who is proud of his job and does it to the best of his ability, respecting that his job and mine are like day and night, knowing that we depend on each other but cannot replace each other.
My recommendations:
If you like combat, honor, prestige, weapons, physical workouts, the field, traditions, and very long walks, go for something in 11-series.
If you like cannons, loud noises, deafness or loss of hearing, the field, but don't like actually fighting anyone face-to-face, go 13-series.
If you like air conditioning, aircraft, computers, and not actually fighting anyone face-to-face, go 14-series.
If you like mechanics and aircraft, go 15-series.
If you like combat, honor, prestige, loud noises, mechanics, and big armored vehicles, go 19-series.
If you like building walls, buildings, bridges, or blowing them up, go 21-series.
If you like computers, networking, and radios, go 25-series.
If you like guarding a gate or checkpoint, busting drunks, and making up stories about enemy contact, go 31-series.
If you like paperwork, go 42-series.
If you like medical stuff, go 68-series.
If you like transporting stuff in big trucks, go 88-series.
If you like handling but not often using ammunition and explosives, go 89-series.
If you like being a mechanic for things with wheels, go 91-series.
If you like logistics, warehouses, etc, or cooking, go 92-series.
If you like electronics and repairing big missiles or the things that fire them, go 94-series.
