Help! I have 8 people coming over and 4 chicken breasts. What can I make that will stretch my chicken? And I?

don't have time to run to the store.

    a variation of Chicken Ala King

    cook and dice the breast and set aside.chicken broth

    In a large sauce pan melt 4 T butter,add 4 T flour and let cook on low heat for about 1 min while you stir...slowly add 1 cup of chicken broth and 1 cup milk ...stir until thick.add 2 C diced chicken season to tast with salt and pepper serve over noodles ,rice or toast

    you can also add mushrooms(small can) 1 C peas,if you have them...

    Chicken Stroganoff

    1 pound chicken breast cut into strips

    6 T butter

    1/3 cup minced onions

    small can mushrooms

    1 cup sour cream

    cook chicken in butter until no longer pink.season with salt and pepper(a pinch of nutmeg works with this dish also)..remove to a bowl

    in same pan that you cooked the chicken add the onions and cook over low heat until the onions are done but not brown..remove to the same bowl as chicken...turn up heat and add the can of mushrooms juice and all.the liquid will help de Glaze the pan...stir and cook until most liquid is gone add sour cream and allow to heat through but not boil..add chicken and onion ...cook to reheat all the ingredients ...serve over noodles,potatoes or toast

    Make Paula Dean's Quick Chicken Pot Pie. I have made it a few rimes and it's delicious and easy.

    Ingredients

    2 cups chopped cooked chicken breast

    2 hard-boiled eggs, sliced

    1/2 cup thinly sliced carrots

    1/2 cup frozen green peas

    1 (10 3/4-ounce) can cream of chicken soup

    1 cup chicken broth

    Salt and pepper, optional

    1 1/2 cups instant biscuit mix

    1 cup milk

    1 stick melted butter

    Directions

    Preheat oven to 350 degrees F.

    In a greased 2-quart casserole, layer the chicken, eggs, carrots, and peas. Mix the soup, chicken broth, and season with salt and pepper, if desired. Pour over the layers. Stir together the biscuit mix and milk, and pour this over the casserole. Drizzle butter over the topping. Bake until the topping is golden brown, 30 to 40 minutes.

    Take your chix breasts and slice them in half making them thinner...filleting them. Heat a large skillet to medium high with canola oil in it. Season the chix with what you have on hand...a little salt, pepper, garlic powder. If you have Montreal Steak Seasoning, its great on chicken. Place the chix in the heated skillet, searing on both sides till browned. Turn down heat to med-low. Add any veggies you have, canned or frozen or fresh, preferrably green beans, broccoli, asparagus, carrots. Add a little more oil and a 1/4 c. white wine if you have it. It's ok if you dont. Serve over rice or pasta. If you do pasta, toss it with warm oil and garlic before putting chicken mix on top. Sprinkle with parm if you have it.

    this best served immediately so make it while company's here.

    Chicken Casserole

    To make a casserole; use a base of cooked rice, pasta, or potato.

    Pre-cook your chicken, then slice, chop, or tear up.

    Add diced celery, onion, or peppers, for extra flavour & crunch.

    Throw in any vegetables you like: peas, corn, carrots, or green beans.

    Mix the cream soup of your choice with milk or water, & pour over.

    You can top with bread-crumbs, grated cheese, or sprinkle with paprika.

    Bake the whole thing at 400F until bubbly & browned.

    Make a stir fry. Cut up the chicken into bite-sized chunks, and stir fry it with some veggies, soy sauce, garlic, and crushed red pepper. Serve it over rice or egg noodles.

    if you have pasta, cut up the chicken cook it and add it to cooked pasta and make a quick cheese sauce,salt and pepper, maybe add some chopped tomatoes, frozen peas, bacon, broccoli, etc whatever you have on hand maybe serve with a salad and some garlic bread, or make chicken and rice in the same manner

    stir fry is a good idea, my favorite for quick and easy is poppy seed chicken. you can also do pasta wtih some type of sauce and cut up the chicken for on top
