Why do you think there will be a tree of knowledge in the New Jerusalem? Keep in mind that Satan was pulling the strings in the garden. Since the most of New Jerusalem is said in the book of Revelation, I'm going to assume you're familiar with that book.

It refers to him as that serpent of old, an allusion to his work in the Garden of Eden. It also states that on the day of judgment he will be cast into the lake of fire. Whether the annihilationists are right or the eternal torment proponents are right, as far as humanity is concerned he will be out of the picture.

I doubt there will be a need for a tree of knowledge, as the test of faith will come in this life, but even if there is without Satan around to tempt us who's to say anyone would even take the fruit?
