What can I expect in terms of road conditions, driving from CA to MO in late December?
I have to drive from San Francisco to Kansas City for Christmas in my beat 2x4 jeep cherokee. I've got multiple sets of chains, but am still worried that this could be more of death march than a trip to visit the family. I'd fly if I didn't have two dogs coming along for the trip. Any advice on what to expect or warnings or even alternate, perhaps safer, routes would be much appreciated...

I would say you have 2 questionable spots - a) crossing the Sierras and b) Salt Lake to Cheyenne. Check conditions before.
Another option is a southerly route (I - 40) - costs an extra 120 miles, but avoids any winter problems.
Make it into a road trip ( http://www.tripcart.com/ ) and if there is rough weather ahead, enjoy where you are and wait a day or two.

you can look foward to cold weather and icey road conditions,depending on the amount of rain coming in off the west coast,..also travel across wyoming at night watch out for strong wind and blowing snow.make sure you have plenty of water and snacks and food,,just in cause the road was to get shut down..you could get stuck for a few days...GOOD LUCK !!!
