Can I use a dry-erase marker on my stainless steel fridge?
I don't see why not- there are stainless steel dry-erase boards and the surface of my fridge looks and feels exactly the same. If I try it and it leaves a stain, is there a product that would remove it?

I don't believe that you can. What you're referring to is called a porcelain on steel dry erase board. These boards are made of a steel under coat but they have a hard white porcelain over them.
If you write on your stainless steel fridge you may ruin it for good.
You can however... get a magnetic dry erase board and use that. MyVisualDisplay.com offers a 20 mil thick magnetic sheet with a dry erase writing surface over the top of it that works really nice.
