Do authentic Mexican chicken enchiladas use diced white meat chicken?
I visited an allegedly authentic Mexican food restaurant in Shreveport and ordered chicken enchiladas. Living in south Texas, I am used to the enchiladas having shredded chicken. I am curious as to which type is truly authentic or if it just depends on the cook/chef.

First of all enchiladas are not a americanized thing. Just because its been Americanized doesn't mean that you have to put certain type of anejo cheese and beans to make it authentic. My mother is from Michocan. She taught me to make enchiladas by cooking the chicken then shredding it with my hands then making a red sauce or green sauce depending on the craving and adding mexican cheese shredding the cheese. As long as you like it don't let anyone tell you whats authentic or not!

Hell, no. We are Mexican and my mother uses shredded chicken as the ingredient. I used to live in the south of Texas, a town named Harlingen, basically it's all Tex-Mex food. It is very hard to find a TRUE Mexican restaurant in the United States. I live in the North now, Pennsylvania, and there are some actual Mexican restaurants here with good food.

Yeah the true Mexican way would be to cook a whole chicken then shred it while it's still hot with those strong Mexican hands.My grandma used to cut food with a knife on her hand.Like no cutting board and shred meat while it was steaming hot.

Enchiladas aren't really authentic per say. But as with most ethnic foods (not just "Mexican") the best ingredients are from scratch. So shredded chicken it is!

Shredded chicken is the original, but I'm guessing that diced is easier and quicker for a cook to prepare.

Either way. In south TX though you get foods cooked in TexMex fashion so it's different from true Mexican cooking. I have made them, and have read recipes for both ways.

there is no such thing as "authentic" chicken enchiladas, they are a "tex mex" American invention. Authentic enchiladas will be filled with añejo cheese or beans, and covered only with añejo cheese and red sauce, mozzarela or any type of melting cheese is not used.
