What is the procedure for planting Olive Trees, and what is the coldest temp they can survive?
I have a ton of fresh olive seeds taken directly from olive trees (in Morroco and Spain) and I plan to start a small grove in New Mexico. I know that the elevation is much higher than Morroco and Spain, and the temperatures much colder in winter. Will I need to plant them in a greenhouse (which is totatlly possible)? And, how do I go about germinating the seeds?

My best guess is that you are in Grow zone 7. Most of Spain and Morocco are in zone 10.
You will have difficulty because southern European olive trees are not freeze hardy.
I would recommend going to an Arbequina Olive Tree. They can handle zone 7.
