Any good, quick apple recipes?

They aren't my favorite fruit, but I'd like to eat more, take some to work. I'm interested in recipes for anything from cut/raw apples (i.e. add a little cinnamon) to cooked apples. But it should be quick and portable. Thanks!

    Make some apple juice. Juice all of your apples then chill in a jug. When you go out to work funnel some into a bottle.

    FRESH APPLE BREAD Recipe By : Serving Size : 10 Preparation Time :0:00 Categories : Apples Breads Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- -----loreli aguda wskd49a--- 1 c Sugar 1 t Baking soda 1/2 c Shortening 1 c Broken pecan pieces 2 Eggs -- beaten 1 1/2 tb Buttermilk 1 c Tart apples -- ground or grate 1/2 ts Vanilla 2 c All purpose flour -- sifted 3 tb Sugar 1/2 ts Salt 1 t Cinnamon Cream sugar and shortening; add eggs and apples.     A very easy way to enjoy apples is to peel them, cut into small chunks and place in a deep microwavable dish, with a good handful of raisins, plus a splash of lemon juice. Cover and micro it

    on med/high for about 10 minutes, take dish out and with a potatoe masher, just smash the apples, but leave them still lumpy.Sprinkle with cinnamon and just one shake of nutmeg. Place back into microwave on med/high for another 5 minutes. It is delicious and if you make a whole lot, it will last a week in the frig. You can take a covered plastic dish of this chunky apples to school or work and eat it with some cheese and/or peanut butter crackers. Yum!! This is very healthy for you, and the raisins give you iron and potassium.

    My grandma gave me this idea when I was on a diet about a year ago. Core an apple (or simply cut it in half and cut the core out), set it in a bowl and fill the middle with water, or just pour about 1/4 C. water over it if you slice it. Sprinkle cinn. on it and cook it in the micro for 1-2 min. Tastes just like apple pie filling, even with no sugar on it! It's great when you put them in the fridge after that too so they cool off...yum

    Peanut Butter. Yummy! Maybe you can shred it. First, you have to wash and peel it. Second, shred it using a cheese grater or some other kitchen utensil that shreds. It is really good if you have sore teeth and/or visited the dentist. But my absolute favorite is peanut butter, unless you are allergic. Bon appetite!

    On youtube there is a video of a grandmother making some simple baked apples. I tried them and they are really good! Goes great with frozen yogurt.

    i always like to make myself a peanut butter apple sandwhich...ive never tried to but i guess you could put some cinnamon on it as well.....tastes pretty good

    APPLE MUFFINS

    INGREDIENTS:

    1/2 cup butter, room temperature.

    1 cup granulated sugar.

    2 large eggs.

    2 large apples, ripe, cooked and mashed

    1 teaspoon vanilla extract.

    2 cups all-purpose flour.

    1 teaspoon salt.

    1 teaspoon baking powder.

    DIRECTIONS:

    Grease 12 muffin cups or line with paper muffin liners.

    Cream butter and sugar with an electric hand-held mixer until light and fluffy.

    Beat in eggs, one at a time, beating after each addition.

    Add apples and vanilla and beat until smooth.

    Mix together the flour, salt, baking powder, and baking soda.

    Stir flour mixture into butter mixture, alternating with the sour milk or buttermilk.

    Stir until dry ingredients are moistened then gently stir in chopped nuts.

    Spoon banana muffin batter into prepared muffin cups or liners.

    APPLE SALAD

    Ingredients:

    5 medium red delicious apples.

    ½ cup of celery, sliced.

    ½ cup of chopped nuts.

    ½ cup of mayonnaise.

    ½ cup of raisins.

    Juice of one lemon.

    1 head of lettuce, cleaned (to serve on).

    Directions:

    Core the apples and dice into half-inch cubes.

    Sprinkle the apples with lemon juice.

    Combine the apples, celery, nuts, mayonnaise, and raisins. Mix thoroughly.

    Serve on lettuce leaves

    CHRISTMAS APPLE & CINNAMON LOAF

    Ingredients:

    2 ½ cups of flour.

    1 teaspoon of baking soda.

    1 teaspoon of cinnamon.

    1 cup of sugar.

    ¼ teaspoon of salt.

    ½ cup of butter (to be melted).

    1 beaten egg.

    ½ cup of milk.

    1 teaspoon of vanilla essence.

    1 cup of peeled, chopped apples.

    ½ cup of raisins.

    ½ cup of chopped pecans (optional).

    Directions:

    Preheat oven to 350°F (175°C/Gas Mark 4)

    Lightly grease a loaf pan all over.

    In a mixing bowl, combine the flour, salt, baking soda, sugar and cinnamon.

    Incorporate the melted butter, egg, milk and vanilla essence. Stir & mix well, whilst folding in the raisins, chopped apples, and pecans.

    Pour the mixture into the loaf pan.

    Sprinkle the top with chopped pecans.

    Bake for 45 minutes or until the center of the loaf is cooked thoroughly.

    APPLE STRUDEL

    Ingredients:

    1 pound sweet apples, peeled, cored and thinly sliced

    1/4 cup golden raisins

    1/4 cup dried currants

    1/2 teaspoon ground cinnamon

    2 tablespoons white sugar

    2 slices brown bread, crumbled

    1/2 (16 ounce) package phyllo dough

    1/4 cup butter, melted

    Directions:

    Preheat oven to 400 degrees F (200 degrees C).

    In a bowl, combine apples, raisins, currants, cinnamon, sugar and bread crumbs.

    Stir well.

    Spread several sheets of pastry generously with melted butter and lay them on atop the other on a baking sheet.

    Spread the fruit mixture evenly over the top sheet, then roll the sheets up to form a log shape.

    Brush with melted butter again.

    Bake in preheated oven 30 minutes or until pastry is golden brown and fruit is tender.

    GRILLED CHEESE AND APPLE SANDWICH

    Ingredients:

    1 slice of Swiss cheese or Jack cheese.

    ½ slicd apple.

    2 slices of bread.

    Sugar to taste.

    Cinnamon to taste.

    Directions:

    Firstly toast the slices of bread.

    Add the cheese and arrange the slices of apple on the cheese.

    Sprinkle with sugar and cinnamon.

    Grill until cheese is melted and lightly golden.

    APPLE STUFFED CHICKEN BREAST

    Ingredients:

    1 pound skinless boneless chicken breast halves (4 breasts).

    2 tablespoons sugar.

    1/4 teaspoon ground cinnamon.

    2 medium cooking apples (peeled and cut into thin slices).

    1 cup of apple cider.

    1 tablespoon cornstarch.

    Directions:

    Heat coals or gas grill.

    Place chicken breast halves between 2 pieces of waxed paper.

    Pound chicken to 1/8-inch thickness.

    Mix sugar and cinnamon. Coat apple slices with sugar mixture.

    Divide apple slices among chicken breast halves.

    Fold chicken around apples; secure with toothpicks.

    Cover and grill chicken 4 to 6 inches from medium heat 20 to 25 minutes,turning once, until juice is no longer pink when centers of thickest pieces are cut.

    Remove toothpicks.

    Mix apple cider and cornstarch in 1-quart saucepan.

    Cook over medium heat, stirring constantly, until thickened and bubbly.

    Spoon over chicken and serve.

    APPLE PIE

    Ingredients:

    CRUST:

    2 1/2 cups white flour

    2 tbsp. sugar

    1/4 tsp. salt

    1/2 cup cold butter, broken into small pieces

    5 tbsp. cold vegetable shortening

    8 tbsp. ice water

    FILLING:

    1/3 to 2/3 cup sugar

    1/4 cup all-purpose flour

    1/2 teaspoon ground nutmeg

    1/2 teaspoon ground cinnamon

    Pinch of salt

    8 medium sized apples (a medium apple = about 1 cup)

    2 tablespoons margarine

    Directions:

    CRUST:

    Measure the flour, sugar and salt togetherl. Stir to combine.

    Add the chilled butter pieces and shortening to the bowl. Cut them in with a pastry cutter or knife.

    Add the ice water. Mix until the dough holds together (add a bit more water, if necessary).

    Turn the dough onto a lightly floured surface, knead it together, then divide in half.
