There are two types of death: the first is physical, the second is spiritual. Just like there are two births (John 3): Physical, and Spiritual.
When God said you shall surely die, there were two ways that they did die. One was immediate. That was their spiritual death. From doing that sin entered into their bodies and their spirits died to God because they had disobeyed Him. (The only way to come back from their spiritual death was to look forward to the Messiah (Jesus) the same way that we today look backward to Him.) The second was gradual. That was their physical death. Before the fall of man, they were not subject to physical death, but as soon as they ate that fruit, their death clock started.
Hope that makes sense.

God said to Adam and Eve that they would surely die if they eat from the Tree of knowledge because they would have lived forever and not had to die if they didn't eat from it. Sin brought death into the world.

We are each non-physical, "immortal" (cannot die or be killed) Spiritual Beings and are Not the physical, "mortal" (does die and can be killed) human body we look at in a mirror...I honestly don't know what those verses you posted mean. Usually when this happens, there is a lie involved and, or not enough information to draw any kind of helpful conclusion...
There are two separate realities here. You and me as non-physical, immortal, Spiritual Beings with a Spiritual Nature and our own Native Abilities and Perceptions and you and me Operating a physical human mortal body and using this human body's eyes to see with and other physical perceptions, nose, touch, etc. Without this human body we are in our natural reality (Heaven) and operating this human body we are using the Physical World reality. Unfortunately something bad happened and we each Forgot we had our own native reality and falsely considered the Physical World was our natural or native reality...
Adam's Flesh Was Altered
"4:1 But Adam and Eve cried for having come out of the garden, their first home. 2 And indeed, when Adam looked at his flesh, that was altered, he cried bitterly, he and Eve, over what they had done. And they walked and went gently down into the Cave of Treasures".
Adam And Eve Could No Longer See The Angels In Heaven
"4:8 And Adam said to Eve, "Look at your eyes, and at mine, which before beheld angels praising in heaven; and they too, without ceasing. 9 But now we do not see as we did; our eyes have become of flesh; they cannot see like they used to see before."

The were created immortal. Turning away from God and doing things their way instead of Gods way would bring misery into the world.
The first eleven chapters of Genesis hammer this idea over and over. Read past the historical, factual, physics and biology of Genesis and get into the story.

Before their fall there was no death - God created them perfect and immortal. Their sin made them mortal.

I think it was more of a test to see if they would listen to Him and obey His word.
