What to cook? Someone please help?

I am a single working mother and part time student with two small girls, 5 and 2. I try to feed my children healthy foods, but they are SO picky and my time is limited. However, I am determined to do whatever it takes to feed my children healthy meals. I need some ideas. Unfortunately, my mother fed me whatever wanted when I was young, which was usually A LOT of fruits and vegetables, thus I'm having difficulties coming up with meals that incorporate all of the food groups. Any help will be appreciated. I will be going grocery shopping in a few for dinner tonight! :)

.look up vegetarian meals it taste good plus gives your children the nutrients they need to grow big and strong. Meats tend to be high in sodium, hormones and other chemicals thats not really good for an adult let alone a kid.

How to Thaw Chicken Safely and Quickly

When thawing chicken under running water, be sure to use cold water. Keep the chicken in its original wrap or place in a water-tight resealable plastic bag. Be careful not to cross-contaminate other food products, work surfaces or utensils with the dripping water.

    8 tostada shells

2 cups cooked shredded chicken breast

    1 cup refried beans

1 medium green pepper - thinly sliced

1 medium onion - thinly sliced

1 packet (1.25 ounces) taco seasoning mix

    1/2 cup lime juice

    1/2 cup water

    1 cup shredded cheddar cheese

Shredded lettuce, diced tomato, salsa, sour cream and guacamole for garnish -- optional

    Directions

    1. Preheat oven to 350 degrees F.

    2. Combine taco seasoning, water and lime juice and stir well.

    3. Pour half of the taco seasoning mixture over the shredded chicken and the other half over the pepper and onion.

    4. Cook chicken in a large skillet over medium-high heat until the sauce starts to thicken slightly -- 2-3 minutes. Remove chicken and keep warm. Add peppers and onions and cook until the sauce starts to thicken and veggies start to wilt -- about 3-4 minutes. Remove and keep warm.

    5. Lay tostada shells on an ungreased baking sheet.

    6. Top each shell with 2 tablespoons refried beans, 1/4 cup shredded chicken, peppers and onions and cheddar cheese to taste.

    7. Bake until the cheese just starts to melt -- about 5 minutes. Remove from oven and serve with optional garnishes.

My kids seem to love these, it makes dinner fun! Good luck!

    Hawaiian Haystacks

Large can of cream of chicken soup, you can add chicken broth to get to desired thickness

Shredded chicken (I get canned, as it is easier)

    Rice

Mix your soup and chicken together, bring to a boil

Put desired amount of rice on plate and top with some of your soup mixture.

Then here are ideas for your toppings, you can use as many or as few as you like! I like mine with everything!

    Chow main noodles

    Pineapple

    Green onions

    Bell pepper

    Olives

    Cheese

    Tomatoes

    Coconut

    Slivered almonds
