1. His species has never, & will never, be revealed according to Lucas. He never gives much of a reason other than "that's the way I want it to be" but in the end it is his call since he owns this whole monster.
- The assumption of "Alien N", that he is a "Whill" has been categorically denied by Lucas as being completely false. "The Journal of the Whills" does exist but Yoda is NOT a Whill.
2. To the best of my knowledge there has never been an Ewok Jedi ... there has however been several Hutts who were Jedi. Leia duels one in the book Planet of Twilight.
3. You will find in various gaming aspects of Star Wars many various "Midi-Chlorian" charts for the known & unknown Jedi/Sith in those games ... most put Anakin at somewhere between 25,000 & 29,000. None of these "charts" are "official" ... there has never been an "official" Midi-Chlorian Chart issued by SW.com or Lucasfilm. The only thing that we have as "official canon" is what was said in episode I ... "It's off the charts ... over 20,000" ... don't think George is in too much of a hurry to get this info out to us.
4. No, Stormtroopers are NOT the evolution of the clonetroopers. I do have to say it was very amusing to see "Sham" say that the Senate voted to have standard recruits ... the Senate did what Palpatine told them to do ... their "votes" were nothing more than Rubber Stamps. One thing most don't know about the Clones is that their lifespan was only about 20 years, this was "hardwired" into their DNA. Some clones were able to change that but most didn't. All Stormtroopers were human males ... either volunteers or conscripts from the various worlds of the Empire.
5. Anakin didn't "build c-3PO from scratch". He built him from spare parts ... no patent allowed.
6. R2-D2, on the other hand, was a new prototype astromech droid ... one of only a few 100 ever made. He was the first to employ the use of the "omni-gate" logic transfer circuity. You can find all this info in the "Dark Nest" trilogy of books by Troy Denning. The story is set 35 years after the battle of Yavin. Personally I didn't care much for this series ... the only thing that makes it worth reading is all the stuff you learn about R2 and the fact that he finally tells Luke & Leia who their mother was. They even get to see a holovid of their birth.
7. Leia is a "different" case when it comes to her rank in the Jedi Order. Luke elevated her to the rank of Jedi Knight in the Corellian Trilogy of books set 14 years after the events of ep VI even though she had really never had much formal training. She never takes any kind of formal training until the "Dark Nest" trilogy of books mentioned above. By the end of that trilogy she is considered a "true" Jedi Knight in every sense of the title. I'm sure that she will be elevated to the rank of Master sometime along the way but she will never reach Luke's level of power. The older a person is before beginning formal training the lower their potential for power is. Luke started formal training at 18 actually losing a bit of his potential also by "starting late". Leia started in her late 40s, she's lost about a quarter of her potential in those years.

*What species is Master Yoda?
It was never revealed in the movies, will never be revealed in the Extended Universe (Yaddle, on the Jedi Council in episode 1 was the same species.)
* Has there ever been an Ewok Jedi? (Just imagine... a lightsaber wielding teddy-bear)
No. but part of me likes to think that yoda is actually a really old ewok. I mean, imagine a 900 year old ewok. it will have gone bald, and its ears would just keep growing.
* Just how high is Anakin's medichlorean count?
Even higher than master yodas. but no scale for measuring midichlorians has ever been given.
* Are the Storm Troopers the "evolution" of the Alliance clone troopers? If so, how did Anakin AKA Darth Vader get control of them?
Storm troopers are just clone troopers, designed specifically for storming.
The emperor was the one who put in the order with the cloners, he made sure they were taught to follow his orders, (Comander Cody, execute order 56). he also ordered them to do what darth vader told them to do.
They are also easy to control with the force as they are weak minded (see obi-wan in mos eisley in episode 4)
* We know for a fact that Anakin built C-3PO from scratch. Does he get paid royalties for every 3PO series protocol droid ever made?
No, he built C3po to existing protocol droid standards, if anything he probably owes copyright fees to the builders of protocol droids.
* Where did R2-D2 come from? (R2 was already active on Episode 1)
He was just an astro droid. an extremely well put-together astrodroid, but still just an astrodroid.
* And finally... In the New Jedi Order series... Will Princess Leia ever become a Jedi Master?
I disregard the entire EU. sorry. but yes, sure, why not, she is strong with the force.

That's never been answered, but presumably he's a Whill, as in "The Journal of Whills."
No.
That has also never been answered. His count is simple "off the charts."
Yes. Storm troopers are the next generation. The troopers were created for the Republic and Palpatine became the head of state. Technically, Emperor Palpatine controls the troopers.
Anakin built Threepio, but that doesn't necessary mean that he came up with the design. Anakin probably assembled Threepio using an existing template.
Artoo is an astromech droid. They were already in common use throughout the republic.
Yes.

!. They've never named Yoda's species
2. No
3. 27,700 (Off some website. Doubt it's real)
4. No. The Senate voted to have standard recruits. (100% positive) Clones are expensive, too.
5. He built a droid model that already existed. (think of building a Mustang with a kit)
6. He was an astromech for the Naboo ship in the first film and was seen as special from the start.
7. The expanded universe bores me and contradicts itself every other book.
