How do you keep cakes fresh for postage?
I want to start my own bakery business, but am curious as to how I can ensure the cakes don't go stale overnight. They will probably have icing and designs e.g on the top, so how can I preserve this also? (without squashing with cling film etc)
Any tips or advice, much much appreciated!

You may pack them in dry ice. And of course they would be secured in some type of packaging. To keep it together and from getting all over the place. And orders like this if shipping perishable items. You would want to go for fast shipping,overnight if possible.

I ship my 100 proof Xmas cakes in cake tins from the Dollar stores, just wrap them in heavy saran wrap, seal in the tin, this will keep them fresh overnight in shipping, I send mine surface mail, and have had e-mails from friends and relative that mine were fine.
