Anyone Have a Good Apple Cake Recipe?

I'm making/decorating a cake for my local fall festival. I have already decided on the theme and the decorations, its an apple theme. Well, I am wanting to make an apple cake, with caramel filling and a cream cheese icing. I have a good cream cheese icing recipe and I know of a good caramel filing, however, I am not sure how to make the apple cake. I am thinking, maybe using something with apple pie filling in the batter, but I don't know. Does anyone have any ideas on a good apple flavored cake batter recipe? Thanks

    You can bake 2 layers of the cake and then put the filling in between the layers. :)

    If you are wanting to put filling in between, then you could slice the 9x9 cake in half and add your caramel filling, then icing with your cream cheese. Yumm-o. Sounds sooooo good. Wish I could have a slice.... ;-)

    Amazing Apple Cake

    Prep Time: 30 Minutes

    Cook Time: 45 Minutes

    Ready In: 1 Hour 15 Minutes

    Servings: 12

    "This is a moist and wonderful apple cake. Great to eat at any time of the day!"

    Ingredients:

    1 1/4 cups white sugar

    2 cups all-purpose flour

    2 teaspoons ground cinnamon

    2 teaspoons baking soda

    2 eggs

    1/2 cup vegetable oil

    2 teaspoons vanilla extract

    1 cup chopped walnuts

    5 1/2 cups chopped apples

    Directions:

    1. Preheat oven to 325 degrees F

    2. In a medium bowl, stir together the sugar, flour, cinnamon, and baking soda. Add the eggs, oil and vanilla, mix well. Add the nuts and apple, mix until all of the apples are evenly coated. Pour into a 9x9 inch pan.

    3. Bake for 45 to 50 minutes in the preheated oven. Serve warm or cool.
