which word to use in the followng scenario, señora or señorita?
Senorita means Miss, in spanish or it also means Young lady... My mom is not married (Miss) but she is also not young, so if you were to address her in spanish would you say señora or señorita?

Because she is your mother (she is A mother) she must be called "señora", although she's not married.
Señorita is something similar to 'maiden'. Because she had a daughter, she doesn't qualify as a maiden.

Señora. There comes a time in every woman's life, when she becomes a Ma'am (in English) and a Señora in Spanish...about age 30 or so.

Señora. Generally this is what you should use unless you're referring to someone younger than yourself.
