Whats considered the best veg for different Sunday roast meats?

I entertain people regularly for a sunday roast

And i was wondering what is considered to be the best vegetables to compliment the differnet kinds of meat you can use.

What's the best veg to compliment beef?

Or Chicken?, Turkey?

Or Lamb?

Or what do you, through your own experience, consider to be the best veg with these meats?.

    You cannot have a traditional 'Sunday Roast' without roast potatoes and roast parsnips!!! When roasting the beef, place slices of onion over and around joint - add the peeled and chopped potatoes and parsnips into the same raosting tin and cook together. The onion will caramelise and in doing so will also cook and brown the parsnips and potatoes.

    Beef - Roasted baby potatoes w/ salt n pepper

    Chicken- Roasted carrots w/ salt n pepper

    Turkey - Roasted sweet potatoes w/ salt n pepper

    Lamb - Roasted red potatoes w/ salt n pepper

    For ANY of them I like the following:

    Potatoes, onions, celery, carrots.

    Place the veggies under the roast so that they abosrb all that great flavor.

    In my restaurant I'm using Sugar snap peas, baby carrots & asparagus today
