I need a suggestion for a dessert recipe that travels well and can be made a couple of days in advance.?

I need to bring a dessert to a family reunion this weekend. We will be traveling so I need to make it 2 days in advance. I also need something that does not need to be refrigerated. I am hoping for something original and delicious. Any ideas?

    Bar Cookies of any type are what you should be doing. They travel well, don't need refrigeration, and can be made in advance.

    Try this one.

    Buckeye Cookie Bars

    1 package chocolate cake mix

    1/4 Cup vegetable oil

    1 egg

    1 Cup chopped peanuts

    1 Can (14 ounce size) Sweetened Condensed Milk ..NOT evaporated milk.

    1/2 Cup peanut butter

    Pre heat oven to 350. Grease a 13X9 pan

    In a large mixing bowl, combine cake mix, oil, and egg; beat at medium speed until crumbly. Stir in peanuts. Reserve 1 1/2 Cups crumb mixture; press the remaining mixture firmly on the bottom of prepared pan.

    In a medium bowl, beat Sweetened Condensed Milk with peanut butter until smooth; spread over crumb mixture in pan. Sprinkle with reserved crumb mixture.

    Bake 25 to 30 minutes or until set. Cool. Cut into bars. Store loosely covered at room temperature.

    Makes 2 to 3 dozen bars.

    And another great one for you. I love these and have done the same basic bar but have used cookie dough as the base rather than the graham cracker crust. Either way they are very tasty.

    Chocolate Nut Bars

    1 3/4 Cup graham cracker crumbs

    1/2 Cup butter melted

    1 can(14 ounce size) Sweetened Condensed milk.. Not evaporated milk

    2 Cups semi sweet chocolate chips, divided

    1 tsp vanilla extract

    1 Cup chopped nuts, I like pecans or almonds in this.

    Pre heat oven to 375

    Combine graham cracker crumbs and butter; press firmly on the bottom of a 13X9 pan. Bake 8 minutes. Reduce oven temperature to 350.

    In a small pan over medium heat, melt Sweetened Condensed Milk with 1 Cup of chocolate chips and vanilla. Spread over crust. Top with remaining chocolate chips, then nuts; press down firmly.

    Bake 25 to 30 minutes. Cool. Chill if desired. Cut into bars.

    Makes 2 to 3 dozen bars.

    If you want to make it look a bit different use regular chocolate chips in the melted filling part and use 1 cup of white chocolate chips or other flavor chips to press onto the top.

    Personally, a stunning cake is always a crowd pleaser. I know, I know not so original, but if you decorate it... do you have a pipping bag? That would be really cool. I did a black forest cake for a piano recital and people went nuts over it (home made everything though)! And yes, I had the same sort of requirnments. Anytime you make something home made, regardless of how it looks (well, maybe not completaly) people will like it. Go to a baking/ cooking website such as http://www.joyofbaking.com/ or http://www.bettycrocker.com./ They have some good recipies. Don't sweat it, I'm sure what every you make it will taste great.

    Try making FLAN : it doesnt need refrigiration and it will be fine as long as you dont leave it in the sun or extreme heat.

    you will need

    6 eggs

    1 can condenced milk

    2 cans evaporated milk

    1 tblspoon vanilla

    if you wanrt about 2 tablespoons of liqor(exept tequila or wine) and 1 tablespoon of cofee.

    preheat oven to 320*.

    meanwhile melt some sugar until brownish color on a pan. after its melted put in on a oven safe glass baking pan.(spread the sugar before it hardens).

    blend all the ingridients in a blender only until blended. pour on top of sugar and put in oven for about 1 hour and 10 minutes.

    after its done cooking let cool and refrigirate until you travel.

    once youre ready to serve flip over on another tray and enjoy(remember to pour all the delicious liquid sugar, dont worry it wont be hard when you flip the flan it will be caramelized)

    even if you dont pick this dessert to travel with you i insist you try it since its very delicious

    Make a lovely parfait by layering banana, strawberry, blueberry and vanilla yogurt. Angel food cake is low cal compared to other types. It's nice with fruit and whipped topping.

    ......MMMMMMM.......what about some nice sultana scones.......or a jam sandwich cake.....as long as there kept wrapped up they will keep good......or even better some nice parkin that keeps for days in a tin or other similar container.

    Just give me a shout for recipe if needed.....I have my own for all three.
