Extra-virgin olive oil comes from virgin oil production only, contains no more than 0.8% acidity, and is judged to have a superior taste. Extra Virgin olive oil accounts for less than 10% of oil in many producing countries. It is used on salads, added at the table to soups and stews and for dipping.
Virgin olive oil comes from virgin oil production only, has an acidity less than 2%, and is judged to have a good taste.

Extra virgin olive oil is as the name already implies, better or "extra" virgin oil. It is the oil which is first extracted from the best olives on the market. It is the highest quality of olive oil. Only 10 % of all olive oil is extra virgin. After that comes fine virgin oil which is produced from slightly lower quality and/or riper crop. It is less superior than the extra virgin olive oil though. Third comes the ordinary virgin olive oil which is usually produced from a little more ripe olives than the extra virgin oil. All these oils are cold pressed, however, the riper olives produce a more acidic and less aromatic taste than the extra virgin oil. It is still fine for cooking but not the best choice for salads or dips. The best olive oil is surely the premium extra virgin olive oil which is produced from the few "premium" quality olives and may have an even better taste.

The extra virgin olive oil goes through more processes, then does just plain virgin olive oil.
