Creative things to make with cucumbers, tomatoes, or eggplants?
My garden is producing an absurd amount of these three vegetables, and I don't really have much experience cooking with them. I'm more of an oil and white-sauce person, so I don't know much about cooking with tomatoes, and I've never used eggplants or cucumbers in anything before.

Cucumbers, believe it or not, are absolutely delicious peeled, seeded, cut into chunks and sauteed in unsalted butter until tender-crisp. Otherwise, I like to cut them into strips and marinate them in a mixture of soy, sugar, ginger and garlic for a few hours. Best to do with your eggplants and tomatoes is make a ratatouille; do you have zucchini? you don't need it, but that and onions, chunked with the tomatoes and eggplants, make a beautiful casserole when chunked and baked in a slow oven, then topped with parmesan. Serve with good bread at room temperature: good seasonings for this are basil, oregano and garlic. You can also make baba ghanouj by roasting your eggplants whole or halved with onions until soft, then mashing with salt, pepper, garlic and lemon juice and serving as a dip with pita bread, or roasted tomatoes, which you just core, drizzle with oil and bake at 400 for about 30 minutes, until skins split. Dress these with vinaigrette and herbs; serve with crusty bread for a first course. Italian bread salad, consisting of torn chunks of toasted french or italian bread and tossed with tomatoes, cucumbers and vinaigrette and then allowed to blend and marry for 20 minutes or so, is delicious and a great way to use up that produce and leftover bread. You could make tomato jam; unusual and delicious as a relish for meats and the like, and you could slice the eggplant, salt and drain it, then bread and fry it and use it as a base for a good chunky homemade tomato sauce and some mozzarella; voila-eggplant parmesan!

Scoop out the eggplants and stuff them with cucumbers and tomatoes all diced and mixed with salad cream. Or stir fry the above three ingredients cut into strips and season with chilli oil and vinegar, it makes a good salad.

Cucumbers make a great potato chip dip when you peel them, dice them, and mix them with cream cheese and a dash of lemon juice and a dash of garlic salt.
Tomatoes and eggplants are great drizzled with olive oil, topped with cheese and baked. You can also put them in casseroles, pasta dishes or grill them.

Cut up the cucumbers and tomatoes and add to a salad. Eat both raw. Or with the tomatoes, top a pizza, add to chili, make guacamole or salsa.

One of my favorite things to do with tomatoes is simply to dice them up, mix them in with some olive oil, parsley, sage, garlic, etc. (or your choice of herbs & spices), and use it as a dip/topping for a good french bread. Not cooking, I know, but it is enjoyable nonetheless.
