What should I take for breakfast?

I'm going to be starting a course which involves leaving the house by 6.30 to get the train. The train gets in an hour before my course begins (unfortunately the later one is too late) and I want to take a healthy packed breakfast so I don't have to get up at 5.30 to eat and so I'm not tempted by unhealthy and expensive coffee and croissants. I have no idea what to take though, I usually eat porridge or cereal but that isn't very convenient in this situation.

Homemade Granola I have to make this every 4-5 days but it's worth it and healthy. 1 c oats. 2/3 c chopped walnuts. 1c coconut (I use organic) 2tsp cinnamon 1/2 tsp salt mix well then add 1/4 c melted butter mix then 1c honey mix well. I put parchment paper on a cookie sheet spoon the granola on paper and bake at 300. I preheat my oven and it usually takes about 12-14 minutes but every ones oven is different. Just keep an eye on it and when it starts to turn golden brown remove from oven top with raisins and let cool.I keep it in a covered plastic bowl. I fill a sandwich bag with it and take it to work.

I get up @ 2:45 am to get to work by 3:45 and bring my breakfast every time! I cook/make it the day before and it varies between bring a "pancake" made from pureed pumpkin & butternut squash, eggs & egg whites (all mixed together to make a batter & cooked like a pancake... it packs well & tastes good cold, I promise... sprinkled with cinnamon & stevia!) or you can have these things separately...pureed pumpkin mixed with roasted butternut squash and then an egg and lots of egg whites as well... this also tastes good cold and keeps well.

I would recommend fresh fruit salad. You can make a load of it at the beginning of the week an then just take some as necessary every morning. It is very healthy and should keep you going until lunch time.

Cup of yogurt mixed with granola or Cherrios.

Make a frittata the night before and refrigerate. They are great eaten both hot or cold.
