Should I keep fresh herbs in a glass of water (as you would with a bunch of flowers) in the...?

...refrigerator?

I've seen several chefs on the Food Network with their fresh cut herbs sitting in glasses or small vases of water. Should I be keeping mine the same way in order to make them last longer? I typically buy flat leaf parsley, cilantro, and basil.

Put them on the top shelf of the refrigerator because the lower shelves and crispers are too cold for them. If you only have leaves wash them and shake them as dry as possible then fold a paper towel around them and put them in a zip lock bag. Also put these near the top of the refrigerator. Alton Brown of the Food Network did a show on this just the other night and when Alton talks, I listen!

You can also freeze your herbs; although, you should blanche the basil first. (The leaves will turn black when frozen if you don't.) Just put the herbs in plastic freezer bags and then break off what you need. They will taste just like fresh. If you are going to use them in the next couple of days, go ahead and place them in a glass of water to keep them fresh. Basil wont' keep hardly at all. Best to pluck it fresh from a bush. (EASY to grow in a pot) The other 3 can be stuck in a glass of water and put in the fridge. They still wont' last over a week. And buy the freshest you can find when you buy fresh herbs. Check the cut ends to be sure they haven't browned. Brown = old.

Keeping fresh herbs cool & moist is sufficient enough to keep them fresh for a week,

for example: in a container in the fridge with a moist cloth over the top.

    For ten years,

I worked in a restaurant who's chef made extensive use of fresh herbs,

and moist & refrigerated was what we did.

Taking fresh herbs out of the fridge, and

placing them in a water vase will keep them for that day.

I seem to recall that certain herbs (including basil) should not be stored in the refrigerator, just kept cool. Like certain fruits and vegetables, refrigeration actually accelerates spoilage. Your local produce manager can provide some guidance on this.

You can keep herbs fresh for up to one week by cutting 1/2 inch from the stems and storing them, stems submerged, in a jar of water in your refrigerator.

Some will last longer, some will rot, and some will sprout roots.
