I've found a few, but really looking for a company that someone can actually can vouch for, because I know there are lots of scams out there. Thanks!!

You're wise to look out for scams... plenty to go around for home assembly jobs. I only know one person who does home assembly at home. She keys anywhere from 200-400 locks with specific combinations for a local company. Perhaps that's the way to approach it. Look for local companies who need help. You can market yourself as a contractual employee who earns so much per item assembled. My friend pays nothing for supplies... all is supplied by the manufacturer. Once the items are assembled, she gets a check within a week (I think they check to be sure everything was assembled correctly).

I know the major ones that needs to be avoided are the ones where you have to deposit money into your account and then pay back out, building things that really seem to have no purpose that requires you to purchase a "starter kit", or any opportunity that promises an exorbitant salary with minimal amount of work. But some of the ones out there seem actually legitimate.

The best opportunities are ones you identify yourself. Look around you. What products or services do you need that you can't find- turn a hobby into a business, check out the changes in technology - its moving so fast we need specialists, what changes in law have been enacted that create new opportunities? Write down evey opportunity you think of and do some research - and if it looks really good - a business plan.
