how long do rehydrated shitake mushrooms last for?

My local grocery store only carries dried shitake mushrooms, so when I want to make something with them I have to rehydrate them hours before hand to ensure proper rehydration. I'm wondering how long they would last in the fridge if I rehydrated a bunch? I'd like to have them on hand when I need them. Also, could I rehydrate them, then can them to keep them that way? Thanks for your help.

Hi Sweatpea ,They might not last as long as regular mushrooms because they have been soaked, however you should get 2-3 days from them, if they start to feel slimy or smell chuck them. You shouldn't need to soak them for hours - just take out and use what you need. I hope this helps, all the best. Rab
