fresh herbs for salmon?
I'm making up a dish for new years eve dinner with my in laws
since the salmon is on sale at the local supermarket I was thinking of simply putting a whole salmon in a steam pocket in the oven. My Idea would be to stuff the salmon full of fresh herbs and some spices and pour some sparkling wine in the pocket and thus steam the whole thing.
I'm looking for a few suggestions on what herbs and spices you prefer/ have used before on salmon and what works best for you.

Fresh Herbs with Salmon is amazing! Even better if the fish is fresh too!
First, season fish with SEA Salt and Pepper. Then choose a seasoning pairing:
1. Classic NW Salmon: Lemon Slices, Dill, butter, white wine.
2. Classic Herb NW Salmon: Rosemary, Smoked Paprika, Olive Oil, Wine
3. Herb/Citrus - Dill, Lemon slices, Orange Slices, Brown Sugar, Butter, Zest of Lemon
4. Cajun inspired: Cajun Seasoning, Garlic, Dill rubbed on the outside, lemon slices on the inside
5. BNB Herb Salmon - Fresh Rosemary, Marjoram, Thyme mixture (from my garden, diced then left to dry for 30 minutes on the counter). Rub inside and out. Sprinkle with white wine, butter, add shallots to inside along with a squeeze of lemon juice.
6. Super Simple - Lemon Slices, Dill Sprigs & Capers. Line cavity, add wine & butter, steam.
Don't overpower the fish, but lightly sprinkle these over the inside of the whole fish and over the top to give a nice aroma. I use Foil to steam the fish, works great and makes the skin perfect!
I actually have the BNB Herbs in a jar ready to use anytime!

I think that rosemary is the best for salmon. I know many people say lemon with fish, but I think orange slices garlic and rosemary is just brilliant. don't forget olive oil. As you are using sparkling wine mix it with some olive oil. 2 to 1 olive oil to sparkling wine. You will have a fish that is a master piece!! Good luck, enjoy and Happy Holidays!

Dill sparingly
Lemon grass, bruise the grass.
crushed garlic
Sprinkle dry white wine.
Do not over cook.
serve with lemon slices and mint sprigs.
It is hard to mess up a nice piece of salmon. You can mess it up by overpowering it with too much of anything. Whichever of these tasty suggestions from fellow answerers you choose go lightly.
Sometimes I like to just use apple cider vinegar and a little dill.

I don't like a great range to upset the delicate taste of the salmon. I would concentrate on just one or two like salt and some lemon pepper, or fresh fennel.

I just made this the other night. It was my first experience with cooking salmon and it came out so yummy. My dad doesn't really like salmon unless it's fried and even he like this. Hope I helped.

Dill and lemon, bit of salt & pepper - that is it! Don't over do it or you lose the delicate taste of the fish.
