There are 'virtual' geocaches that can be found on Disney property. It looks like physical geocaches are a bit tougher.
Use this zip code to search for caches near Walt Disney World on the Geocaching website: 32830, search within 5 or 10 miles

Excellent question...if they find them maintenance or landscaping or custodial would undoubtedly remove them, but if you were familiar with the inner workings of WDW (i.e. an ex cast member) I'm pretty sure you could hide one successfully...great question, that never dawned on me...
