What can I cook with the green tops of leeks?
It seems such a waste to just throw them out. Does anyone have any recipes that are good?

great for making stock
flavouring a roast - just add it to the other veggies in the pan
sliced thinly, really good in an omelet
add to your fish marinade or sauce
sliced thinly, great on baked potatoes.

slice them finely and toss into whatever you are cooking that calls for leeks, onions, garlic or other lovely members of the onion family.
I like them in most potato dishes, in pasta dishes, in soups and stews.
toss a handful over the steaks or roast.
lay them out on cookie sheet and dry at 200F for 2 hours in oven. Store in airtight bottle.
Don't toss any good food parts!

Nothing.
Do what I do, and do the main cut where the good part of the leek ends, then unwrap the outer leaf or two and get a few more rings, and then repeat however may time you can get.

you can use them when you're making stock or broth from a carcase or a meaty bone.

I guess use them to make a soup or make with eggs in the morning. ;-)
