Gen:1:1 and 1:2.Since there is a gap between could we insert a vast majority of earth's history and point to 2 Peter 3(3-7) to help prove it or do we use the Lord making the Sabbath day Holy,in reading this God made the heavens and earth in 6 days resting on the 7th/seperating the water and land.

Absolutely, there was. The darkness that was on the earth in 1:2 was a result of the judgment of God on Satan and the angels (and coincidentally matches the estimated time that geologists give for the last ice age...hmm). The events of Gen 1:3 through the rest of the chapter are a re-formation of the world that already existed, and this is when God created man, through which he would redeem the heaven and the earth from Satan. Notice that he tells Adam and Eve to replenish the earth - indicating that it once was filled, but not any more. Notice that he is also told to subdue the earth - there is an enemy afoot (Satan), and man was meant to be the channel through which God would subdue him. There is so much more...
