Need help with a canning qustion?
Soup trying to can soup. home made but after boiling jars for 2/1/2 hrs in canning jars with new lids every jar seals. But soup goes bad in 2 -3 weeks Very pissed! Worked so hard need some answers some of the jars stay good for a long time but most went bad.Same with my CHILI i need a expert cant wast any more food my wife is loosing faith in my canning!!!!!!!

My grandma used a pressure cooker. You said boiling?
Bacteria and oxygen are your enemies.
Consider freezing instead of canning?

This is a very bad area to experiment with. Normal home canning only works with foods that are acidic. Tomato sauce and pickles are good examples. Foods with a neutral ph require a higher temperature. If you fail to get the soup hot enough, botulism grows which leave a toxin in the soup that is the most highly poisonous substance known to man. I don't think you can test for this at home other than giving the soup to someone you don't like and seeing if they die (that was a joke).

I store soup in freezer. Works fine,
I make jam and chutneys to put in glass jars, these I don't boil, I heat in oven to 140 degC , and be sure my produce is piping hot .. Lids, I do boil, then put on TIGHT
Fill right to top Leave no gap for air.
I Dunno what else to suggest.
