My two kids live elsewhere now, & I have to learn to cook for two!?

Now, not only do I have to miss my children and put up with my husband all the time, I have to stop cooking for 4 and having too much left over! Any other empty nesters out there - how did you stop buying so much, cooking so much?! Help.

    I'm not an empty nester, but I've been accused of cooking for a crew of farmhands when it's just the 2 of us! I just love to eat. I honed it down by using smaller pans, pots, and baking dishes, and also by buying in bulk, but portioning for two, so when I pull out stew meat from the freezer, the package is only a pound, not two, or it's one large chicken breast instead of two, or two sausages instead of four.

    It's hard to cook for two because most recipes are for 4 servings or more. I would make items that could be frozen as much as possible. Also, for example, if you bake a chicken, you can serve some for dinner and then use the leftovers for another chicken dish later in the week. You can find recipes for two people, but the amounts of ingredients are often odd, so you end up with some odds and ends of canned foods, spices, etc that you don't use.

    Aw, I'm sorry that your kids left. :( At first I think it will be hard to stop cooking so much, but you could freeze/refrigerate leftovers or donate them to a homeless shelter.
