Will the kids and i get sick if...?

the spouse boils beef or chicken during the night leaves it out on the countertop all night to cool down and puts it in the fridge in the morning (if the spouse remembers) and reheats it for dinner that evening?

the temperature in the house during the night is about 55-60

during the day about 60-70

    I wouldn't chance it. Salmonella can grow quickly on chicken and it would be best if it was put in the refrigerator right after it is cooked. The same goes with the beef. It really doesn't need to 'cool down' before being refrigerated. Also if there is a chance of it being refrigerated later than expected I would definitely not leave it out. Better safe than sorry. Children are also more susceptible to Salmonella and get much sicker from it. Their immune systems are not as well developed as an adults and something that may just make an adult sick could be very serious for the children. Wrap it up and put it in the refrigerator.

    Well, you never want to play with salmonella. Why can't she just put the hot pot in the fridge with a towel under it so pot doesn't melt shelf?

    Eeeeew, don't risk it. You do eventually get immune to food poisoning, but it's really not worth it!
