It depends on what you're looking for. Are you going into the parks and would like restaurants there, or do you just want restaurants in the hotels? Do you want high-end table service? Character meals? Buffets? Some of my favorites:
Boma at the Animal Kingdom Lodge. A buffet with African style spices and flavors, but they still have food if you aren't such an adventurous eater.
Ohana at the Polynesian Resort. This is served family-style and is all you can eat. It's a Hawaiian tropical themed meal and so delicious. They serve salad, bread, lo mein noodles, wings, dumplings, and 4 types of meat (chicken, steak, pork, and shrimp) on huge skewers, plus dessert. If you're lucky you can get a view of the castle.
Crystal Palace inside the Magic Kingdom. This is a character buffet, featuring Winnie the Pooh and friends. We love it because you can make reservations up to an hour before the Magic Kingdom opens, and walk down toward the castle when the park is virtually empty. It makes great photos!
Brown Derby at Disney Hollywood studios is based off the original Brown Derby in Hollywood. Great theming, and great food, including Brown Derby originals: the Cobb Salad and Grapefruit Cake.
Almost any of the restaurants in the EPCOT world showcase are great.
I haven't been to any o these personally, but some of the best are California Grill at the Contemporary Resort, Victoria and Albert's at the Grand Floridian, and Le Cellier in Canada at EPCOT.
When are you going to Disney? they start taking dinner reservations 180 days in advance, and many popular restaurants fill up months out. you'll want to make reservations ASAP or you may be forced to eat counter service.
I'd recommend doing research on the Disney site, as well as wdwinfo.com, intercot.com, and disneyfoodblog.com to determine which restaurants would meet your preferences best.

Let us know how you got that voucher...LOL
Seven top restaurants at WDW...in no particular order...
1) California Grill at the Contemporary...great views and good modern cuisine
2) Cape May Buffet at Beach Club - All you can eat seafood buffet
3) Rose and Crown - Typical British fare but ask for lagoon side seating while drinking a half yard of good beer while Illuminations is going!
4) Earl of Sandwich - Downtown Disney - look, you will not use the voucher her, but my goodness, the sandwiches are really good and the prices are not that horrible
5) Raglan Road - Downtown Disney Authentic Irish food that is better than any I've had and I live near the most Irish of places in NY
6) Any of the restaurants in Animal Kingdom Lodge. The food is good and not too far out. You can go before and see animals...
7) tie Crystal Palace, Liberty Tress Tavern and Chef Mickey The first two are in the Magic Kingdom, the last at the Contemporary. These are all character affairs...Crystal Palace might be better food than Chef Mickey, but it is close. You are also in the Magic Kingdom boefre ti opens (potentially). Liberty Tress Tree Tavern will get you a good spot for the nighttime parade if you time it right and Mickey and the gang do serve a good spread for breakfast.

We've been to WDW 14 times. These are our favorites:
1) Sanaa (Kidani Village at the Animal Kingdom Lodge-excellent food, they have floor to ceiling windows, so you can watch the animals while you dine)
2) Boma's is a great buffet & Jiko's is more of an adult restaurant (both are at the Animal Kingdom Lodge)
3) The Crystal Palace (Magic Kingdom-great buffet for any meal time, fun Winnie the Pooh characters)
4) 'Ohana (Polynesian-fabulous food, fun entertainment, & you can see the Wishes fireworks on the evenings they have them)
5) Coral Reef (Epcot- fine dining. Fun to watch the marine life)
6) Cape May Cafe (Beach Club-excellent buffet, nice seaside type atmosphere)
7) Whispering Canyon Cafe (Wilderness Lodge-especially fun at dinner time, best ribs ever)
8) California Grill (Contemporary-fine dining, Wishes fireworks can be seen here too, specatacular view)
9) Chef Mickey's (great buffet with fun Mickey & friends characters)
10) Brown Derby (Disney's Hollywood Studios-fine dining. Fabulous Cobb Salad)
I have to add 2 more...The Rainforest Cafe (we've been to the one at the Animal Kingdom & Downtown Disney & last year we tried Tusker House for lunch, at the Animal Kingdom. It's a tasty buffet.

Any of the restaurants in the World Showcase in Epcot are fantastic. These are the ones we've dined at: Morocco is a little hidden treasure, with fabulous food, music & a belly dancer. Mexico is fun for any age. The steaks are tasty in Canada. The United Kingdom has tasty English Fare. You can dine indoors or outdoors here, which is nice. France is quite elegant, but you don't have to be dressed up. They have a lovely lunch special with salad, main course & dessert. If you have children, the breakfast with the Princesses in Norway is fabulous.
Dining in Disney is always a fun & tasty adventure. Bon Appetite!

make sure you eat at a restaurant in the park you are at that day. leaving the park to go to a resort to eat can take an hour of travel time one way.
Coarl Reef
Mama Melrose
France- The Worlds
Tony's
Mexico
I have been to the Boma at AKL and thought is was awful.
