Recipes with Few Ingrediants but With Potatoes?

Something without an oven because my oven broke yesterday and is getting repaired in a week or two.Also,no mashed potatoes my family hates them and so do I.Help!!!

    My first thought is mashed potato with margarine or butter, milk & white pepper to taste. You can add salt if you wish. I like to cook a little through the potatoes, rather than sprinkle it over later. An extension of this would be Shepherd's Pie with cooked minced lamb or beef, onions & seasoning in a casserole dish & mashed potato piled on top. You don't have to worry about pastry. A variation of this is Sea Pie, which has a soft suet/dumpling crust instead of potato. Sorry, didn't notice the 'no mashed potato' line at first. Just cook a stew on top of the stove by throwing in the meat & vegetables you like, including potatoes. I always put celery, onion & carrots in & season with salt & pepper. You can add garlic, paprika, curry or anything you like.

    Potato Croquette

    Ingredients:

    3 cups mashed potatoes

    8 ounces shredded boiled cabbage, well drained

    1 egg, beaten

    1 cup shredded Cheddar cheese

    fresh nutmeg, grated

    salt and pepper

    all-purpose flour, for dredging

    oil, for frying

    Mix the potatoes with the cooked drained cabbage, egg, cheese, nutmeg and salt and pepper. Divide and shape into croquettes or patties.

    Chill for 1 to 2 hours, if possible. Chilling the mixture will make it easier to keep the croquettes together. Dredge the croquettes in the flour.

    Heat about 1/2-inch of oil in a frying pan until it is hot. about 160°.

    Carefully slide the croquettes into the oil and fry on each side for about 3 minutes until golden and crisp. Drain on paper towel and serve hot and crisp.

    If you have a slow cooker here's a soup recipe: buy your choice of pork, I prefer boneless pork ribs, potatoes, garlic, vinegar, water, salt, and maybe collared greens. Put bite size pork chunks in slow cooker, add however much water you want for whatever amount of soup you need. Put maybe a tablespoon of garlic, and maybe one or two tablespoons vinegar. That's if you use lots of water, you don't wanna actually taste the vinegar in the soup, you only need a tiny amount. Add salt to taste, then add your potatoes and greens when pork is almost done. Really good with rice or cornbread, the trick is to be careful with the garlic and vinegar. You can substitute any vegetables you like, I prefer collared greens.

    Potato, onion egg scramble

    Ingredients

    4 –5 slices bacon

    8 medium potatoes, peeled and sliced

    1 large onion, peeled, sliced and separated into rings

    6 large eggs, lightly beaten

    Method

    In a large frying pan, fry the bacon until crispy. Remove from the pan and drain on paper towels. Fry potatoes, and onion rings in bacon fat until brown and done. [Cover pan as needed, but make sure potatoes and onions are stirred frequently to prevent sticking and to ensure browning]

    Break the bacon into little pieces. Add to beaten eggs. Pour the egg mixture into the pan and scramble over medium heat until the eggs are set.

    Serve with toast

    you can bake potatoes in the microwave, then cut them and put sour cream, bacon bits, cheese, etc on top.
