Looking for some dinner recipes that I can make for my mom on Mother's Day.. Dessert recipes welcomed too.?

    Chicken Cordon Bleu Rolls

    These are tasty and really beautiful

    2 boneless skinless chicken fillets (1.5 pounds)

    ½ pound of thinly sliced Tavern Ham

    4-1 oz slices of Swiss cheese

    Salt & pepper to taste

    1 cup of flour

    2 eggs

    ½ cup milk

    1 teaspoon fresh thyme

    1 ½ cups bread crumbs

    Cooking spray

    Preheat the oven to 400°.

    Wash the thyme and finely chop it. Set aside.

    Trim the fat from the chicken and cut each cutlet in half long ways. (You want 4 long pieces of chicken not 4 fat chunks.)

    Cover each cutlet with plastic wrap and pound flat (with what ever you have handy.) Wash your hands.

    Lay out 4 new pieces of plastic wrap, about 12 inches long each.

    Lay a flattened cutlet piece on each piece of plastic wrap. Lay 2 oz of ham on each cutlet. Lay a slice of cheese on top of the ham.

    Roll the chicken up around the filling. Trim any ham & cheese that hangs out the chicken.

    Wrap the plastic around the chicken roll and twist each end tightly as if the chicken roll were a piece of candy. Tuck the edges of the plastic under.

    Place the 4 chicken rolls on the plate and microwave them for 90 seconds. Rearrange the chicken and microwave for 60 more seconds.

    Remove the rolls from the plastic wrap and set aside. (Just untwist one end and the roll will come out.)

    Place the flour in one bowl.

    Place the eggs and milk in a second bowl and beat until mixed.

    Mix the bread crumbs, thyme, and S&P and place in the third bowl.

    Spray the baking dish with cooking spray.

    Roll each chicken roll in flour, then in the egg mixture, then in the bread crumbs.

    Place each roll in the dish. Spray each roll with cooking spray.

    Bake for 25-30 minutes or until the chicken is 165°.

    Allow to rest for 5 minutes.

    The best answer I can give you is to find out your mother's favorite foods and prepare them for her. That's what my brother does for my mother's birthday and Mother's Day.

    Her favorites are:

    POLLO CON CREMA (Chicken in Cream Sauce)

    - 8 oz Chicken cooked and cut into bite-sized pieces (preferably boiled or roasted - we prefer thighs)

    - 4 oz cream cheese

    - 4 oz sour cream

    - 1 "squirt" prepared mustard

    - 1 tsp coriander

    - 1/2 medium onion - sliced

    - 1 small can diced green chilies

    - 1 small can sliced black olives

    - 3/4 c boiling water with 1 tsp chicken base (like a bouillon cube)

    - 4 fresh mushrooms sliced into quarters

    - 1/8 tsp black pepper

    - 1/2 green bell pepper cut into thin slices

    Saute onions and garlic until the onions are translucent. Add the mushrooms and bell pepper and saute for 2 minutes. Add the cream cheese, sour cream, mustard, black pepper, diced green chilies, coriander, broth with chicken base and stir well. Bring to the boil. Add the chicken and black olives and mix well. Once the mixture comes back to the boil, turn the heat down and simmer for 15-20 minutes. You want the sauce the consistency of a thin gravy - not runny but not really thick either. This is good served with refried beans and Mexican rice. And if you buy the cole slaw mix at the store and use Italian Dressing with it, that makes a perfect accompaniment.

    And here's a great dessert to go with it:

    FLAN

    1 can evaporated milk

    1 can sweetened condensed milk

    2 eggs

    1 tsp vanilla

    ground nutmeg

    Beat the eggs and add to the two milks. Add the vanilla and stir well. Pour into a round casserole dish and sprinkle with nutmeg. Bake in a 375 degree oven for 40 minutes or until a knife comes out clean.

    This recipe was given to me by a Mexican housewife taking an English as a second language class. She makes this all the time for her family. She didn't use a water bath - she just put the casserole dish on the rack.

    So find out what your mother likes that she doesn't get the opportunity to eat and fix that.

    I'm not sure of your age of level of cooking experience. If your mom has a favorite meal that you can make that would be best. If it's just something that you can't make, tell us what it is & we can try to come up with something similar, but easier.

    Try to cook Asian Curry Chicken for your mom.

    Asian style Curry Chicken Recipes. A flavourful oriental chicken dish which served with rice or a crisp. Fresh milk may be replaced with coconut milk

    Ingredients

    - 300g - fresh chicken

    - 3 - potatoes

    - 3 tbsp - curry powder

    - 5 slices - curry leaves

    - 1 liter - water

    - 200ml - coconut milk

    Spices

    - 10 each - dry chilli, red chilli

    - 20 - shallots

    - 5 cloves - garlic

    - 10g each - belacan, turmeric

    - 2 stalks - lemon grass

    - 5 - bird chilli

    - 2 - candlenuts (buah keras)

    - 1 tbsp - coriander powder

    Seasonings

    - 1 tsp - salt

    - 1 tsp - sugar

    Method

    Rinse chicken and cut into small piece, remove to drain. Peel tomatoes, cut into pieces.

    Remove seeds in dry chilli and red chilli. Peel shallots, garlic and turmeric. Cut lemon grass into dices. Roast belacan until fragrant. Blend all spices in the blender.

    Blend chicken pieces ad potatoes with half spices mixture and set aside for 60 minutes.

    Heat up 3 tbsp oil in pot, fry curry powder and remainder spices mixture, curry leaves, chicken pieces and potatoes until fragrant. Add in 100ml water and braise over low heat for 20 minutes until well cooked, finally pour in coconut milk, Seasoning and water. Serve
